The price of proper Texas BBQ is why I bought my own smoker! It is still expensive but not $40 dollars a pound expensive! My labor for my family is free! My first bbq was good but now it rivals the best restaurant bbq I’ve had! It’s a fun hobby if you have the time! Sometimes a brisket will take 24 hours and I babysit the brisket all through the night! 🤤🤤🤤

My chef older brother lives in western Wyoming and when he comes home to Austin for a visit, he always goes to Terry Black's. Last time he was here two years ago, he bought two whole smoked briskets from TB's. He brought them to my house and froze them solid. He then packed them in a cooler with dry ice and drove home stopping overnight along the way in southern Colorado and when he got home it was still frozen solid, hard as a rock. He put one in his home freezer for later and took one to his restaurant and shared it with all his staff. I have always really loved his familie's place, Black's Barbecue in Lockhart, the real Barbecue Capital of Texas.
Until you make the trek around Lockhart's BBQ joints, you cannot possibly achieve that arrogance of thinking YOU know anything about "best BBQ". Go to school - go down to Lockhart (40 miles south of Austin). Spend the night after gorging on two of the joints, and visit the other two on Day 2. Then you can visit Snow's in Lexington, Texas (east of Austin). Then go up to Taylor - 30 miles north of Lexington. Then drive over the Burnet, Llano and Marble Falls and visit those BBQ joints. Finally, go back to Austin. The County Line. Salt Lick. Franklin's. THEN go to Terry Black's. THEN you've had your Elementary Education and start over again to earn credits with Elgin sausages and another round at Lockhart.
As a native Texan, I can say that we might be known for high school football and barbecue, but we do NOT hate anything that isn't "Texas". We're more likely to be hated by outsiders...until they get here.

Been there, done that, it was absolutely AMAZING. My buddy and I showed up late. After they sold out. But my buddy is a 30 year chef so he got to talking with the guy and we got a full tour of the smokers and he even rustled us up some BBQ that he had intended to TAKE HOME HIMSELF!! But was so cool and so passionate about his product and letting us try it that he gave it to us. Yup wouldn’t take our money!! Needless to say, I have only Amazing things to say about that spot!! The Brisket was like BUTTER!! The Burnt ends were to DIE FOR!!
