      Hello Christian I’m from Cameroon and my family been in the cocoa business for over 60yrs now. Living in Canada has made me realize how much the Cameroonian cocoa farmers are lacking in regards to the fact they can’t produce or manufacture chocolate out of the cocoa beans themselves. I’m in the process of starting my own manufacturing company where I can produce quality chocolate and other products from cocoa.

But right now I'm on a research stage like how to plant the tree how to manage them., from harvesting the pods and so on and on.     Can you share how to manage & use a tempering machine to make multiple / different single origin chocolates? Like using one tempering machine for a particular single origin, then cleaning it and using it for other and so on? Would hand tempering be a better option then?

    Hello Dylan, thank you for the very informative video. I am wondering if instead of 2 units 25 kg wet stone grinder, could I instead start with 1 colloid mill which can grind at least 50 kg/hour and combine it with 1 unit 25 kg wet stone grinder? This way I can have faster grinding time then use the wet stone grinder for conching. I would appreciate your input. The cost would be at the same range.

    Hi, I'm from india the cost of the grinders are less than $750 doller for each, you can get grinders for home use around $100-200 dollers.

    Can you comment on molds and mold quantities relative to starting a factory? How many are you using given that it's not an automated process? Any comments on design intricacy, procurement, etc? Thanks for the great content.

      i reckon you could 3D print moulds, then cast them in food-safe silicone. or, for example, if you can sculpt in clay, you can cast from that. or make a mould out of a christmas ornament. there aren't any limits other than your imagination, resourcefulness, and the physical properties of what chocolate is capable of doing. you may have to learn a few new skills and invest in some fairly inexpensive equipment, but you'll forever be free. if you got to a high production stage, you'd probably want to research vacuum formed moulds for things that don't need too much detail.

    What do you think about POMATI tempering machine? bought it for 10k and wish it's as good as Selmi. Here in Saudi Selmi is not less than 15k-18k so Pomati is the way to go as a beginner

From Cameroon, I am one of the biggest cocoa farmers with an annual tonnage of 180+ tonnes.

    In india we call this melanger as wet stone grinder n we use this to make dosa batter its there since 40 yrs from now.....I have recently started making chocolates with this grinder n it makes a smooth paste only finding ways to temper chocolates now....

      Will be nice to start from buying cocoa paste. That way you can eliminate the roasting and grinding u til you get a bigger space for more machines

    Bruh nobody starting small is gonna buy any of this stuff. It's all thousands of dollars. This for people who have good capital or a bank loan to start with, or already have continuous sales and customers.

    nothing traditional ... all industrialized. there is no such thing as natural and made only in Mexico. I recommend Oaxaca, Chiapas to try the true taste of artisan chocolate, which was considered the drink of the gods.
