Cuban Pulled Pork with Cilantro Lime Rice and Beans | Low FODMAP | Gluten Free | Instant Pot Recipe

- This cuban pulled pork recipe is super easy and perfect for summer when it is just too hot to turn on the oven or stove. All you need is an instant pot and a rice cooker, which don't give off much heat at all. The dish has an amazing citrusy and slightly spicy sauce with added depth and dimension from the cumin and caramelized brown sugar. I dare you not to like it!
I love to meal prep this dish on Sunday and use it throughout the week to make wet burritos, pulled pork tacos and sandwiches, huevos rancheros, and even layer it over spinach to make cuban mojo pork bowls. With a little creativity the possibilities are endless!
PRO TIP: Freeze your extra sauce into cubes for a quick and easy way to add flavor to soups, rice, beans, quinoa, potatoes, meats, veggies -- basically anything you want!

INGREDIENTS:
4lb Pork Shoulder/Butt Roast
1/3 C Brown Sugar
1.5 C OJ
1/2 C Lime Juice
1 Bunch Cilantro
2 Green Onions
1 tsp/cube Chicken Stock Powder
2 tsp Cumin
1 tsp Oregano
1 TB Cornstarch
Optional:
1 Jalapeño
1 Bay Leaf
Peppercorns
1/2 tsp Cumin seeds
Instant Pot: Pressure Cook on HIGH for 1 Hour
Crock Pot: LOW for 8 Hours or HIGH for 4 Hours

Made this tonight. Really liked it. It was a tad sweet but I think if you added the jalapeno it would counter some of that sweetness. I'll make it again soon.

Totally! You could bring it to a boil on the stove, then reduce the heat and simmer your pork roast for about 3 hours with the lid on until it’s tender and about to fall apart.😉
It would be really nice if Instantpot ramped up the searing temperature by at least 50°F and made a flat bottom pot so all of the oil and juices didn't drain to the edge.
Hi, can you provide more info involving the Garlic Oil? Is Garlic infused olive oil appropriate? Or do we need to search for something else?

When it comes to low fodmap I find that it’s so confusing because a good portion of the things that says that I cannot have, I can because they don’t trigger me. And majority of the stuff that says that I can have, I can’t. Because it causes me to have the worst gastritis attack ever.
I know it can be really frustrating, that’s why I encourage my clients to keep a food journal. The low FODMAP diet is a great framework to address your symptoms, but I believe the self knowledge you gain from your journal is BETTER. That’s also why I encourage people to not skip the reintroduction phase to pin point those triggers. In the mean time, I would try intermittent fasting to rest your digestive system, drink bone broth daily to help repair the gut, and stick to fully cooked foods that are easier to digest. No salads! Hope that helps.❤️

Oh no! Why? Hopefully I can clear up any confusion you have. I use a bit of cornstarch in the recipe to thick the sauce up a bit, but feel free to omit it if you prefer.
@@gritandgroceries There's no confusion. As for why, well first and foremost, it isn't readily available in Cuba. Second, I never touch the stuff.
Well I never claimed my recipes were super authentic. Lol But they are super good, Americanized, and ibs friendly.☺️
You can accomplish the same thing by using\making a roux. Just add some maybe half a cup flour after browning the meat but before adding the sauce, maybe add a bit of oil\butter just to keep it steerable. Stir until the flour is browned, which may be hard to tell through the sugar. So maybe practice making roux separately to get a sense of how it cooks.
Corn starch and beans are ibs friendly? Are you sure..?
