  • Arkansas is home to some delicious, finger-looking good old-fashioned home cooking. Today we will be frying up some catfish and pickles with homemade dips and worthy side dishes.

    Fried Catfish Recipe:
    2 pounds fresh catfish filets
    sea salt to lightly cover fish
    enough buttermilk to submerge catfish
    1 cup cornmeal
    1/4 cup flour
    1 tbsp old bay seasoning
    Pinto Beans recipe
    1 pound soaked pinto beans
    2 tbsp Avocado oil
    5 cloves of garlic
    1 yellow onion medium dice
    4 oz smoked bacon
    2 tsp chicken bouillon
    1 jalapeno seeded and diced
    1 tsp ground cumin
    1 tsp smoked paprika
    2 tsp kosher salt
    1 tsp fresh ground black pepper
    Cast iron cornbread recipe:
    3/4 cup cornmeal
    1/4 cup polenta
    1 cup all-purpose flour
    1/3 cup caster sugar
    1 tsp kosher salt
    2 tsp baking powder
    1 tsp baking soda
    1 1/4 cups full-fat buttermilk
    6 tbsp unsalted butter (2 for cast iron pan before adding batter)
    1/3 cup avocado oil
    2 eggs
    Serve with honey, butter, and sea salt
    Tartare sauce:
    1 1/4 cups mayonnaise
    3 tbsp finely diced dill pickle
    3 tbsp finely diced shallot or onion
    2 tbsp chopped dill
    2 tsp chopped capers
    1 1/2 tbsp mustard of choice
    1 tbsp lemon juice
    1 tsp Worcestershire sauce
    2 tsp salt
    1/2 tsp black pepper
    Fried Pickles:
    1 cup all-purpose flour
    1/3 cup cornstarch
    1 tsp salt
    1 tsp pepper
    2 tsp onion powder
    1 tsp garlic powder
    1 tsp smoked paprika
    1/2 tsp turmeric
    1 cup ice-cold water
    1 1/2 cups panko bread crumbs
    Homemade ranch:
    1 cup mayonnaise
    1/2 cup sour cream
    3/4 cup buttermilk
    3 tsp onion powder
    1 tsp garlic powder
    1 tsp sugar
    1/2 tsp msg
    1/2 tsp salt
    2 tsp white vinegar
    1/4 cup chopped parsley
    1/4 cup chopped dill
    1/4 cup chopped chives

      ​@@thatdudecancookSonny when you get to Maryland, all you need to do is follow the recipe on the back of an Old Bay can to the letter, and you will make a PERFECT Maryland crab cake. Most restaurants around Baltimore substitute bread crumbs for Ritz crackers or Saltines. The key is fresh lump blue crap meat. NOT the pasteurized stuff from Asia it does NOT taste the same.

    As a former Arkansas resident, I can confirm, they have the best fried catfish and hush puppies. Those two with a side of coleslaw and a big glass of sweet tea, and you have a great southern meal. 👍

    I’m a catfish connoisseur here in the Natural State. You did pretty dang good, I have to say. Great crust on the cornbread, beautiful color on the fish and pickles, bonus points for the homemade sauces.
    The only things I’d add: hush puppies as another side (why not? They’re delicious) and some Vidalia onion wedges.
    I’d have to taste to know for sure, but process, ingredients, and appearance already nets you a 9/10! Great job!

    From Oklahoma (great episode on that!) have family in Alabama my whole life, I would definitely do Pimento Cheese, Fried Okra, and dabble with their Gulf dishes, they are superb! and unique to Alabama. Shrimp and Grits, crab cakes, Fried oyster tacos.

    Here in the PNW, my family did a monthly "Fry Night" on a weekend. We had a huge variety of batters and foods for frying, and every burner on the stove had a fry pot. Our usual meats were rockfish from the coast, steak, pork and chicken strips, and shrimp. Our sides were battered and fried potato wedges, broccoli and cauliflower florets, zucchini sticks, onion rings, mushrooms, bell pepper rings and green beans. Everything from the batters to the dips was made from scratch. Good times!
    PS - No fresh catfish here, and the frozen stuff tastes like mud smells.

    I'm from Florida! There are so many options for this state...
    But I would suggest Stone Crabs, Conch, Fried Gator bites, or Grouper and Snapper.

    Native Georgian here, well since you already made cornbread and fried catfish (absolute favs might I add) I'd have to suggest something with collard greens. One of my favorite meals to eat when I go home is a bbq pulled pork sandwich, Brunswick stew, collard greens, and banana pudding for dessert.

    Hey I'm from Arkansas cool that your doing the 50 state highlight. Beans look good. We would never put old bay seasoning on our catfish that's an east coast thing. Most of the catfish here is more a trafiotal cornmeal type seasoning with a savory or spicy aspect. Save the ole bay for seafood boils. With the cornbread we don't like sweet cornbread so remove the sugar and add jalapenos but typically we have hush puppies with catfish. Also add slices of lemon and onion (Vidalia onion)

      Agree on the Cubano, with homemade pan cubano. I spent a lot of time in rural Florida between logging seasons in southeast Alaska. One of our friends made a seafood stew with swamp cabbage. (Heart of palm) It was incredible. Every thing in it we caught or harvested ourselves.

    Hi Sonny. I've lived in Alabama almost all of my life. How about going the breakfast route? You could do a southern style breakfast. Something that is known in the southern states is homemade biscuits and chocolate gravy. So decadent and delicious.
    It's relatively easy to make as I recall but you could take it to another level if so desired or you could do homemade biscuits, bacon, eggs, and three kinds of gravy: sausage gravy, red-eye gravy, and chocolate gravy. Just a thought.
    Just wanted to add that chocolate gravy recipes are usually passed down through the generations. Love your content by the way!

    Grew up most of my life in Florida. Any of the cuban staples are a must. Guava pastries, croquetas, vaca frita, ropa vieja, mojo pork, and churrasco steak would all be great options.

    I know Louisiana is famous for their boil but Floridas got some incredible boils and seafood dishes. Whatever you do PLEASE do not do a key lime pie or something cliche like conch fritters or whatever don’t just focus on the keys. Floridians eat wild boar, venison and other wild animals. Also we eat hearts of palm!

    One of my local grocery stores finally got Savora mustard in stock...permanently. I bought a jar last week and I've used nearly half of it already!
    SAVORA MUSTARD IS SO FREAKING AWESOME! If you're reading this, please embark upon a Wild Goose Chase to find some if you have to. It took me months to find it, but it was worth it!
    I've also made Sonny's ranch dressing like five times already and it is AMAZEBALLS!

    As a kid in the early sixties, our family would take fishing trips to Arkansas. Before the chains took over, there were a number of simple family run hole-in-the-wall restaurants providing great southern/country food not usually available to us in Chicago. Incredibly friendly too (more than once we were greeted with, "I remember you from last year.") I'm no expert, but this looks pretty close to what I remember. Good job.

    Hey, thanks for the series in general - i'm enjoying it so far and I'm sure I'll continue to do so. One quick thing, you can look up the exact proportion if you want to do so, but for that amount of beans I'd add some, like couple of teaspoons or so, baking soda (and maybe a bit of salt) to the soak water. It will make for a better bean consistency, IMO

    As someone who lived in the Mid-South for decades, I always thought of this as more of a Mississippi dish than an Arkansan dish. That said, there's a lot of overlap. Many American states are so big that regional cuisine often trumps anything state-specific.

    Grew up in Arkansas. Fried catfish is a good choice. If you wanted to be authentic, white beans is the move.

    Having catfish tonight that I caught today. I make my catfish the same but my favorite dipping sauce is creamy buttery mashed potatoes and country gray with a side of sweetcorn

    Research a dish created in Mobile, Alabama. West Indies salad. Jumbo lump crab meat, Wesson canola Erl, sweet vidiala onion, vinegar. Don’t forgot about fantastic ingredients from bama such as conecuh sausage and our access to seafood is good as anywhere in the world. I guarantee everyone gonna say to do smoked chicken with Alabama white sauce.

    I grew up on the Georgia-Alabama border. Lots of foods you can have some fun with. For Georgia, If you want something sweet, Peach or Blackberry Cobbler, Banana Pudding, or Pecan Pie is fun. Some unique snacks could be boiled peanuts or pimento cheese. Vidalia onions will be a must for anything savory from Georgia. If you are going for something that no one has covered when cooking Georgia dishes, I'd highly recommend looking into the scrambled dog or dumpster dog as some call it. A west Georgia staple I didn't even realize was local to my area until I moved to Birmingham for college.
    For Alabama, they have some of the best food on the gulf coast. Shrimp and Grits really is one of the best dishes you can find anywhere. Fried Green Tomatoes are a must for a side dish North Alabama White BBQ is always something you can go for. . Fried Okra, Sweet Tea, Collards and any other classic soul food could also apply to both states. Something super super unique to Alabama I've found is Biscuits and Chocolate gravy.

    Great choice for Arkansas. Have kinfolk in Enola, just north of Little Rock.
    When friends and family visit us here in tornado alley (Duncan Oklahoma), and don't know, at a gathering, they sometimes say, "I hope I get to see a tornado while I'm here". Anybody within earshot just gets real quiet and looks at them. Until someone says, no, you don't.

    When cooking beans, my mom never used any kind of stock. A little slab of fatback was always the best seasoning, along with pepper. Any kind of fish was soaked in buttermilk and dipped in seasoned cornmeal.

    Don’t know when you are getting to CA, but the crab season is about to close, so I’ll be making my Cioppino one last time. I roast my tomatoes, onion, garlic to build the base, make sure to add a touch of live basil at the end.

    We were definitely known for our severe weather yesterday. ☹️ Need to try some hot sauce on your fish. That’s another way it’s eaten. The beans need a relish of some sort. Or you can simply eat it as a side. It’s a good acid to break from all the fried foods. There’s always a mason jar of home-canned chow chow on the shelf. 😊 For me personally, I melt my butter in my iron skillet, then pour off most of it into my cornbread batter. I don’t use any oil in the batter, just the butter itself. Also, no sugar in it, please!! We also might dice up some pickled jalapeños and put them in the batter and make cornsticks instead! Fun fact: my iron skillet is the one my mother received as a wedding gift. It’s been making cornbread for 66 years! It’s well seasoned! If I fix another fried dish for a side, it’s fried okra. I think you made a great meal! Edited to add…I saw some other comments and yes, we generally fix hush puppies not cornbread. We also used to do a “fish gravy” when I was a little kid. You take your leftover breading and fry it in the oil. Scoop it out and drain it, then put on a piece of white bread. I know, I know, your cholesterol went up just reading that 🤣🤣

      Duncan Oklahoma here. Hines chili sauce on the beans, and homemade chow chow on eggs for breakfast. c1960s.

    Dude!!!! I've not yet tried polenta in my cornbread, but I've used grits for a number of years. I like to brown my butter while my pan is coming up to temp. Niceeee!
