The Chinese food in the west are mainly from Southern China (Cantonese food).
And many of the food from Southern China are "changed"

Well done 👍. The bustling night markets with diverse culinary offerings significantly enrich the nightlife and cultural exchange in Chinese cities. This abundant cultural exchange is, in fact, a significant characteristic reminiscent of the prosperous Tang Dynasty. It reflects a comprehensive embodiment of ethnic unity, abundant resources, advancements in hygiene and healthcare, well-developed transportation, and the overall peace and security of the nation's populace. In contrast, considering Europe and America, where even nighttime safety is not guaranteed, how can the ideals of democratic freedom and economic prosperity be realized?

    Food
    from the NORTH
    from the SOUTH
    from the EAST
    from the WEST
are all very different from each others.
Do you all know that during ancient China times
    that the Emperors of China
had many different types of foods
    EACH DAY !!!
Each day, about one hundred type of food were prepared
    for the Emperor. !!!
Those that were cooked by the chef
to the liking of the Emperor will be
rewarded & those that were NOT
then the chef will be "punished' !!!
Especially during the Qing Dynasty time !!!
Do you all know that there is a restaurant in Beijing
that you have to make a booking, months ahead ??
    To taste the
REAL AUTHENTIC food served to the Emperor.
The Chef was a former chef for the
    Emperor of China.
It cost many thousand of USD for a table of ten.
