How well you are maintaining the sharpness of the knife plays most vital role. You can buy 10000 rs knife but will be only useful for spreading butter if it is not properly sharpened.

There are broadly two type of knife edges, serrated edge(toothy edge) and plain edge.
Both have pros and cons. A serrated blade is good for slicing action and they donot need to be sharpened for very long time. However sharpening a serrated edges knife is tricky.
A plain edged knife is better for push cutting action. They do require sharpening quite often but they are easy to sharpen on a whetstone. If you buy a straight edged knife with decent steel and you regularly touch up to maintain the sharpness you are good to go with the plain edged knife.
I like to keep a big plain edged chefs knife along with small serrated edged knife.

I bought two imported chef's knives for Rs 1,000 and Rs 2,500. They were really beautiful, great to hold and gave me a lot of enjoyment in the kitchen. But after 3 years, the first one's handle broke. The second one has lost its sharpness after 6 months and I had to buy sharpening stones. Without regular sharpening it is useless. In 2003 I had bought a Japanese chef's knife for Rs 50 from a mall in Kerala. It is still working and needs occasional sharpening with a cheap plastic knife sharpener. However, the best knife is my stainless steel serrated knife bought for Rs 500 at Big Bazaar. Have been using it for over 7 years and needs no sharpening. Cuts everything - veges, fruit, bread, meat easily. Indian is best.
