RECIPE
Ingredients:
For the crust:
170g (6oz) Biscuits/Graham crackers
6 tablespoons (90g) butter, melted
2 Kinder bueno bars
For the filling:
2¼ cups (500g) Cream cheese
2/3 cup (180ml) Heavy cream, cold
1/3 cup + 1Tbsp (50g) Powdered sugar
10oz (280) Kinder chocolate
1 teaspoon Vanilla extract
8g Gelatin powder + 40ml cold water
For the topping:
2 Kinder Bueno bars
20g Milk chocolate, melted
1/2 cup (120ml) Heavy cream, cold
2 tablespoons (15g) Powdered sugar
1 teaspoon Vanilla extract
Directions:
1. For the crust: In a food processor or a ziploc bag crush the biscuits into fine crumbs. Add melted butter and pulse until combined. Press into bottom of 8-inch (20cm) springform pan. Refrigerate while making the filling.
2. For the filling: In a small bowl stir gelatin powder and water. Let bloom for 10 minutes.
3. In a large bowl beat cream cheese and powdered sugar until soft and smooth, add melted kinder and beat until smooth. Add heavy cream, vanilla extract and beat to soft peaks.
4. Melt the gelatin in the microwave for 15 seconds. Temper the gelatin: Gradually add few tablespoons of the cheesecake mixture into the dissolved gelatin and stir until combined. Pour back to the cheesecake mixture and mix until combined.
5. Pour into the springform pan and refrigerate for at least 6 hours.
6. Decoration: Drizzle some milk chocolate over the top of the cake. Set aside. Whip heavy cream and powdered sugar until stiff peak form. Transfer to a piping bag. Pipe over the cheesecake. Place 1/4 of Kinder Bueno bars over each piped whipped cream.

Thank you for the lovely recipe. I tried it and semi successful on the third attempt.
1. The butter to biscuit ratio was not great. 90g of butter for 170g of biscuit meant it became saturated. I used 50g of butter on the second attempt and thought it worked better but any advice here would be helpful.
2. Melting the chocolate - hadn't done this before so straight in the pan it went..where it got burnt! A quick shot on seeing it in a glass bowel on top of simmering water would have been helpful for an amateur like me :)
3. Once made and out of the fridge overnight - the cream kept melting. Maybe I needed more agar agar? Is 8g of Gelatine enough? Any tips for this part would be very helpful.
I tried your strawberry cheesecake and absolutely loved the recipe...was the best cheesecake I have ever tasted. Was just a bit disappointed with this one.
Hiya!! Here’s a recommendation for the 3rd point that will prevent the melting of your cream. I do this (as i’m Muslim and can’t consume gelatine). So whip the double cream and icing sugar separately and fold that into the mixture that has cream cheese and chocolate. This gives it a beautiful airy texture and it sets perfectly in the fridge! ☺️

Dina Dossym I’m aware but this way you get an airier cake and some others in the comment section have stated that when using agar jelly (halal gelatine), it doesn’t set. Also, agar/halal gelatine is hard to find where I am,

There is absolutely no need for gelatine in this recipe, I really don't know why that horrible stuff was added?? Once the melted chocolate cools and firms up, together with the whipped heavy cream, the cheesecake will hold its shape to perfection.
Yes, you can use agar agar instead. I never worked with agar agar before, so i can't tell the exact measurements.

Use agar agar. It is the vegan alternative to gelatine. But be aware that you need like 3 times less agar agar compared to gelatine.

Shiri Sheep yep. Tasted delicious. The gelatine is pointless in the recipe anyway as it sets perfectly without it and nearly all cheesecake recipes don’t include gelatine anyway!

This looks amazing ! Gelatine powder is quite hard to find , the supermarkets here use leaf gelatine, would it be the same amount of leaf gelatine in terms of weight if I weighed the sheets in grams? Thank you !
Hi, gelatine sheets are more common in my country too. The brand I use provides the instructions on the box, specifying the amount of grams you need. Usually 1 sheet = 2 grams. In my experience, you need at least 4 sheets of gelatine every 500 ml of cream to have a pudding consistency.

@@elkiechiu well, yes 4 sheets is definitely 8 grams, but it looks like the filling is more than half a litre here, but read carefully the instructions on the box of your gelatine before "experimenting". 😉
