The professional sounding captain--assertive and quick witted, clearly on display by this fine 727 commander! Well it's been 24 years since this was recorded...wow :)
Slow process with the introduction of newer planes. I think it started with the 747-400 (1989) and MD-11 (1990) where they were no longer required. However, since there are still some old birds flying around (there are still 727's in service for example) it is possible that there are still flight engineers around in these, but I have no confirmation for that.

Those 727s sure seem to climb very slowly...
Long sleeves are very uncommon among US pilots.
Not in those days.
They wore their suit jackets and officer-caps when outside the aircraft.
