- In today's video I am doing up some smoked shotgun shells on the Traeger pellet grill. Now, these smoked shotgun shells have been incredibly popular as of late so of course I had to see what they are all about. I'm not going to lie, this easy smoked shotgun shells recipe was an absolute hit, and while I don't think I'll make them ALL the time, they are a nice change of pace for a quick and easy appetizer and best of all it's something you can make ahead and cook the next day if need be. | Ingredients |
-Cookin’ Pellets Longhorn Blend Pellets
-1LB Pork Sausage
-1 and 1/2 cup of shredded cheddar cheese
-1 pack of manicotti shells
-1LB of thin/normal cut bacon
-BBQ seasoning of your choice
-BBQ sauce of your choice
| Instructions |
Prep:
1. Remove the pork sausage from packaging and add to a large bowl.
2. Season the pork sausage to taste with BBQ seasoning of your choice.
3. Mix in 1 and 1/2 cups of shredded cheddar cheese until well incorporated.
4. Remove a manicotti shell from the package and carefully start stuffing it with the sausage and cheese mixture until it is halfway stuffed, and then began stuffing the other side until the shell is completely stuffed with the pork and cheese mixture. Repeat the process until your sausage mixture is gone. This recipe yielded approximately 10 shells for us.
5. After the shells are stuffed, carefully wrap them in bacon and do your best to completely cover the entire shell so there no dry and crunchy spots after the cook.
6. Once all the shells are wrapped in bacon, season liberally with the BBQ seasoning of your choice.

1. Fill the hopper on the pellet grill with Cookin' Pellets Longhorn Blend pellets.
2. Set the temperature to 300º F.
3. Let the shotgun shells smoke for approximately 45 minutes or until the bacon is done and the sausage mixture is at a food safe temperature (approximately 165º F).
4. Once the shotgun shells are done, brush a light layer of BBQ sauce on each shotgun shell.
5. Allow the BBQ sauce to set on the shells for approximately 3-5 minutes while on the smoker.
6. Once the glaze has set, remove from the smoker to cool for approximately 5 minutes.
7. Once the shotgun shells have cooled enough to handle, eat and enjoy!

I made these for Father's Day weekend, invited the In-Laws for supper. We had to use Cannelloni shells as Manicotti shells were impossible to find. It worked find, they were just smaller. They tasted great and were a big hit. We also had ribs, corn of the cob and baked potatoes. My Father-In-Law looked pleased and called it "Quite the feast", I'm in the good books!

These look awesome. Going to test this out but use a chorizo/cream cheese/diced jalapeno mixture for the filling instead.

Gonna have to repost how they turned out. I want to try this as well but I think I might boil the noodles for 2-4 minutes just to make sure they are nice and soft

Looks great! I'm going to try with a filling of Italian sausage, mozzarella, provolone, minced onion, and chopped fresh basil. Serve with a side of chunky homemade marinara.

Ash Kickin' BBQ I just wanted to compliment you on your video. I thought it was incredibly well produced. Very clear and concise no wasted time. How you cut and edited the video was perfection. You skipped through a lot of the repetitive tasks that make other videos drag on. And I especially like that you cut out the part where you chewed up the test bites at the end and just gave you're impressions. Personally it drives me crazy listening to people smack on food and talk with their mouth full while they're testing it. Couldn't have done a better job man! Great video

So I’ve had a lot of questions as to if you can make these in the oven, yes! The recipe is the same. Also, for those drastically concerned about me “cutting out” my taste test reaction, I cut out me chewing…which I do in all my videos, cause nobody wants to hear someone chew their food. Anyways thanks for watching!
if it gets that many people rowled up and you're worried about it, you could try just speeding up that portion of the video and turn the volume down for that piece of the clip and let your music come up a bit during the speed up. Just a suggestion, I do spicy food challenges (you can see on my channel if you're interest) where I have to leave me chewing in and that's how I get around it. If you're not worried about it though then keep it up, either way great video.
I subbed for 2 reasons. 1 I respect the grind, I seen that great value sharp cheddar and I got exactly the same bag in the fridge xD and 2 I haaaate hearing people chew. So thank you!!!!
Agreed I also hate to hear someone chewing, background music is a must for me at dinner, although if you struggle with this, have children, it will make adults a little more tolerable.
I am thinking about trying this in our air fryer, as we do not have a smoker. As the air fryer recipes are generally similar to the oven ones, I imagine it is also the same. Would you have any recommendations for our first try at this recipe in an air fryer?
@@ryanchenevert8182 I have a feeling an air fryer would crisp the shells up too much. I recommend an oven.
I made your shot shell recipe for the 4 th of July. When I went to make then early on the 4 th. I found out I didn’t have any Manicotti shells. So, I used my jumbo shells! I think those turn out amazing. The grand babies used them a finger food. The adults would grab one and walk around while visiting. Excellent recipe! I will be making this again and I have shared your page with many.

This was a test run for me to be able to share with Kiddos.
Prep'ed yesterday. Smoked this morning. Very good. I did follow your directions concerning manicotti shells on half of the shells. Followed manicotti box instructions with the other half of the shells, boiling the shells for 7 minutes in boiling water which allowed the shells to be more tender with final cook. Boiling the shells 1st made stuffing a little more difficult. Had to roll the meat mixture into hot-dog shape to slide then stuff into shells. I used my own rub to coat and several 'sweet sauces' to determine which would work best.
Had to use my propane smoker as my area is under a 'burn ban'. Used pecan wood. Next time will try cherry wood.
All in all, we are pleased. Thanks for sharing.

Glad you did a video on these. They looked awesome! I've made these a couple times and found that breakfast sausage ramped up the flavor! Don't get me wrong, plain pork sausage was good, but the added flavor of the breakfast blend took it over the top. I'm definitely trying your hot and fast method. Darren these are fantastic I make the every so often my twist is I add jalapeños to the mix , I do run them at 250 I just like that deeper Smokey flavor as those shells soften the to absorb smoke .

I watched your video and made them, however, modified the ingredients and made two batches: batch #1 was breakfast sausage (pork). The second batch was a breakfast sausage (chicken) which is a favorite my wife uses - both were outstanding! Another thing I learned is that manicotti for some crazy reason was tough to find - I found one package after shopping 4 stores, however, took my wife's suggestion and bought a box of "Large shells" and followed the exact process - either way they were cooked, they were delicious!!! Thank you soooo much for the idea and the video!!!

Great video Darrin!! I tried these at 250 before watching your video and made the mistake of overlapping the bacon which didn’t crisp and was rubbery. The 300 temp makes sense and I will definitely try these again! Another great video!

Just a little “Tip” for ya. Make sure you wrap the bacon around the edges/tips of the shells so they don’t dry out while cooking, Also after you wrap the shells with bacon and seasonings you want to throw them in the fridge for 5 hours so the bacon grease can soften the shell, it’ll get somewhat soft just from cooking but it’s way better letting em sit for 4 or 5 hours in the fridge before cooking so the shells are nice & soft, also throw some cream cheese in with them as well, definitely adds even more flavor. 👍🍺😎

We do something that is about 95% similar to this. The difference are we use Mild/Hot Italian sausage and use jalapenos with the ends cut off instead of manicotti noodles. I am def going to try it this way at least once.

Nice video, and they look great! I'm doing my first batch this weekend. Curious how the meat actually turned out at 300 deg...was it dry in the slightest, or did it stay moist like you thought it would?

@@AshKickinBBQ They turned out pretty good! Couple things I did that I might change next time. One, I used breakfast sausage. It was tasty but kind of dense. I may try a ground italian sausage next time to see if it's a little 'lighter'. Second, i used thin sliced bacon for about half of mine, ran out and ended up using thick for the rest. Thin is definitely the way to go! Couldn't get a full wrap with the thick and pieces sort of fell apart in the cook. I think you have a winning process! Thanks for sharing.

Also as it turns out I happen to be a Chef. Something that I would recommend would be using a Smoked cheese blend like smoked provolone and cheddar, and Why not add some Smoked Poblano Peppers to the mix, ohh and garlic and Cilantro?!

Love the “Shotgun Shells” recipe, but there is a manicotti shortage here in Colorado. I ended up using large conchiglie shells, which turned out great. Also, I think you should call these ones “Grenade Shells, what do you think? 😊

I just bought my first ever pellet grill smoker and I bought it based around seeing this video and wanting to make these so bad. Your video worked out perfectly, my shells came out amazing I ended up doing sausage like yours, came out great then I did ground chicken and made some Buffalo ones and some other sweet ones with chicken they were amazing.
