Never tried it this way, I generally wait till the last 1hr or 2(depending on the weight) and wrap it in butcher paper. Then I get some of those healthy burnt ends
Yeah, Nick's way is...shall we say "unconventional" to say the least. I didn't see him trim the decal, looks like he temped the point (instead of the flat), and the broth bath was excruciating to watch.

Real quick trick...for a more crispy bark use Butcher Paper roll instead of foil....it will be spot on!!!!!
