Ingredients
Chicken 5 Pound, cleaned and neck and back bone removed and split in half
FOR RUB
Paprika 1 1⁄2 Tablespoon
Salt 1 1⁄2 Tablespoon
Garlic powder 2 Tablespoon
Onion powder 1 Tablespoon
Cayenne pepper 1 Tablespoon
Cumin 1 Teaspoon
Cracked black pepper 1 Teaspoon
FOR SAUCE
Ketchup 1⁄2 Cup (8 tbs)
Pineapple juice 1 Cup (4 tbs)
Soy sauce 1⁄2 Cup (8 tbs)
Rice vinegar 2 Tablespoon
Garlic minced 1 Tablespoon
Fresh ginger 2 Teaspoons
Directions
MAKING
1. Prepare rub by mixing together paprika, lsalt, garlic powder, onion powder, cayenne pepper, cumin and cracked black pepper.
2. Coat chicken all around with the rub.
3. Get the Pit barrel prepared by filling charcoal basket. Place the charcoal basket at the bottom and get it started by adding lit briquettes over charcoal
4. Let the pit barrel come up to temperature. Place a mesquite wood in there.
MAKING
5. Hang the chicken in the pit barrel cooker and let it cook for about an hour.
6. Meanwhile in a pot, heat pineapple juice, ketchup, soy sauce, garlic, rice vinegar and fresh ginger until it starts to thicken. Remove the sauce from heat and let it thicken further.
7. Baste the chicken with the sauce and place them back in the barrel for about 15 minutes.
8. Baste one more time and cook in the barrel for another 20 minutes.
9. Slice and enjoy :)

Sweet Jesus! That is the best-looking chicken I've ever seen! Gorgeous!!!
AeroDoe Thanks so much! I appreciate that, and really appreciate you watching :)
I can smell that through the internet! Thanks for sharing.
My wife bought me a Pit Barrel Smoker for father's day gift, I got it almost a week ago, and experimented with it by smoking a tri-tip, a whole fryer and some ribs they all came out well, or at least better than expected.
Now that I've watched the videos on this channel, my smoking experience increased and I've now been asked to smoke some meats for our friends. I'm gonna try out this Huli-Huli chicken recipe and hope I can pull off another culinary surprise.
Big props to Smokey Ribs and those wonderful recipes, maybe with a little more experience, I'll be able to develop a few recipies of my own, Thanks again Smokey Ribs, my wife even thinks I can actually cook.
Glad your enjoying cooking on a PBC! I love mine, and really need to get it back in action soon. Thanks for the great comments, and your going to love the huli huli chicken or at least we did :)
Looks great! The dark meat is my biggest challenge on PBC cooks.
These videos keep me connected with home while being away overseas. Thanks so much and PLEASE don't shorten them!
+TheDurhamBull I'm glad your enjoying them, and I appreciate you watching them. I've always had a hard time doing a short video lol, so that shouldn't be a problem ;)
Smoky Ribs BBQ & Southern Cuisine Thanks mate!
That looks absolutely divine. Cheers from India.
+iSabier Cheers to India! Thank you so much :)
Looks great Rus, can't wait to try it. I lived in Hawaii for 6 years and really enjoyed the huli huli chicken from the road side rotisserie grills. You know they were near when you started smelling the Kiawe (pronounced "Kee-ah-vay") smoke. It sure was hot in south MS last weekend, I was visiting family in Bay St Louis. Keep up the great work.
Fairon Pavolini Thanks, and also thanks for the correct pronunciation of kiawe. Yes, it was smokin hot last weekend for sure! I'm not that for from Bay St. Louis. I live in Biloxi, or actually right on the edge of Biloxi
I decided to try this after reading all the rave reviews & I'm so glad I did! I didn't have access to a grill in the wee hours 😅 of the morning, so I pan seared instead. I made a few adjustments to the spice rub - I used smoked paprika, smoked sea salt, ground crushed red pepper (I ran out of cayenne), 1/2 tsp ground grains of paradise, which has a very close flavor profile to that of black pepper. I kind of felt guilty after that because I wasn't sticking close to the recipe, so I got out my coffee grinder and ground some peppercorns! 😂 I also added 1 tsp of ground bay leaf salt (made it myself ), as I noticed some other recipes called for brining, using salt, sugar & bay leaf. I also dialed back on the ground pepper, I can handle the heat, but my kids unfortunately, cant! The sauce I followed exactly, except for the addition of about 1/2 cup of brown sugar to balance the salt, & I think I'll use reduce sodium soy sauce next time. I LOVED IT! The chicken was tender & flavorful.
Just ordered a PBC & should have by next Wed.Glad I watched this video because I always brine my chickens. You saved me an extra step. Thanks. Will also try your Huli Huli recipe it looks like a winner! Thanks again, Roger
Got the pit barrel on Tues and did Huli Huli on Sat. Followed your instructions to the "T". Without a doubt the best barbqued/smoked chicken I have ever tasted and I have done a ton of Virginia chicken in the past 43 years! As a side dish I made pineapple rice. Fantastic partners! I'll send you the recipe I used if you want.
Steve Riggleman Really glad you liked the huli huli chicken! Steve we just loved it too! I would love to have the recipe for the pineapple rice! That sounds fantastic! Thanks!!!
The color on that bird, it's a thing of beauty! So what's cheaper... A trip to Hawaii, or a PBC? I vote for the PBC! heh heh.
SmokeyGoodness Thanks Dan! A PBC is much cheaper, and it keeps on giving ;)
Another fine "must try" recipe. You guys are really stepping up on the camera work. The HD quality is really easy on the viewers,,, thanks!!
GA1dad Yes, I hope you do try this one for sure! Thanks, I for one, have really tried to step up my video and audio in the past 8 months or so, and it really is much better than before and really complements the food as well
I made this up today and it was spectacular. Thanks for posting.
Thank you so much for sharing - will be trying when the weather in the UK improves
This is the type of BBQ my Asian friends in NorCal would make!!! Yours is excellent!!! Thanks for another awesome video!!!
Cookin with Surfin Sapo Thanks Sapo! Excellent flavors in that sauce as well as the rub
I just got a PBC and this was the first thing I made. It came out absolutely fantastic. The chicken took quite a bit longer (like 4+ hours) to cook but I had my PBC running at like ~260-270 the majority of the time.
Just Got my pit Barrel smoker I'm doing wings and ribs tomorrow but this is definitely gonna be my next cook. I even have some pink Hawaiian Salt along with all the other ingredients for the rub and glaze. That is some beautiful chicken man. Thanks for the video helping us novices Start strong!
Your going to love this recipe, or I'm pretty sure you will. I've had a lot of feed back from other people that have tried it, and they just love it! Enjoy the new PBC, and thanks for the comments!
Just got back from Hawaii. Your Huli Huli chicken is spot on my brother spot on..
+Ol Angus Thanks so much for the feedback! I really appreciate it! Would love to go to Hawaii myself one day :)
i have watched this video at least a dozen times! i cooked it tonight on my kammado and HOLY COW my new favorite chicken! i modified the cook slightly i used legs, thighs and breast individually then i started first low and slow indirectly cooking it at 250 for about a hour then i pulled the chicken and the smoke stone and ramped grill up to 350 and finished it off with two coatings of the sauce and my lord. i had my parents over for dinner and to try my dads first comment when he saw the grill " are you feeding a army" after dinner we put 3 pieces of chicken in the fridge!! it was a little spicy for my mom next time i think i will make some as you did and make a separate rub minus the cayenne for the heat intolerant. Love you videos keep up the good work.
Thanks for the feedback, I enjoyed reading that!
made Your Huli Huli Chicken again Sir. Wonderful as always. Good Teacher you are. Thanks.
I saw a Youtbe video of Mike's Huli Huli chicken on Oahu and wanted to try it. We rented a van in Oahu on a trip a few months later and just followed the coast. I was so surprised when we rounded a corner after a couple hours of driving and there was his yellow truck and trailer. He explained the process and I got a couple of pics with him by his truck doing the hangloose sign. I bought two chickens and it was awesome. Of course I did not ask his recipe, but now I know from you just about what it is. Thanks Russ!! A small tip from Mike is that he likes to use small chickens. Insider info. Am pretty sure you don't mind that. I like to learn and that is why is why I am a subscriber.
+pingstick Very cool being able to eat the original real deal Huli Huli Chicken! I would love to do that! I appreciate the tip, I'll keep that in mine next time for sure!
I will be doing this one real soon. It looked amazing Rus. Love the way this video was shot. The clarity was amazing.
Michael Wyman Thanks Michael! Great flavors, and I know your going to love it :)
Great call using the PBC on Huli Huli. I usually cook the old school "Flip Flip" basket, but I have to say, I think I'll rock it this way next time. Great job Rus!
I want a pit barrel. Looks so good I wanted to jump through the screen.
Ballistic BBQ Thanks Greg! That's what I love about the PBC, compared to a grill. No flipping or turning. Just let her rip ;)
Ian Craft They are a fantastic product for a great price, and do an amazing job.
Russ, I made this tonight and it was probably the best chicken I have ever had. using my PBC it took just over 2 hrs from beginning to end. juicy, tender, and flavors that are out of this world. I wish I could post a pic to show you how awesome it looked.
Good deal! Glad you enjoyed the recipe, I know we sure do love it too! I don't know if you use facebook, but if you do, you can post the photo on my Smoky Ribs page, and then I'll share it from there so it will be seen in the main feed on the page. Thanks for the feedback, I sure appreciate it!
Ok I did it! I made Huli-Huli chicken last night and it came out perfect, my wife and friend, said it's the bomb.
Good deal! We love it too. Thanks for the update and glad it worked out good for you!

Juanelo1946 Thanks John, and thanks so much for watching! The sauce is really really good, and would go great on a number of different meats :)
Great video. One of the best videos on CZcams when it cones to using a Pit Barrel Cooker, with the lighting of the coals, waiting 20 minutes to come to temp etc. Gonna make chicken with a white Alabama bbq sauce today on my PBC but I guarantee I'll be trying this out next. Great job....thanks!
Thanks, I sure appreciate the comment! Let me know what you think of this recipe after you make it. Chicken with Alabama white sauce sounds really good!
Made this today for dinner, but I brined first. Used a weber kettle. It is FANTASTIC..... thanks for the recipe Rus. Gonna try the sauce on some pork chops next.
+haroldmusa Glad you enjoyed it! Good call on brining.

+Chris Stigall Have fun with the PBC! I really enjoy cooking on mine. That hinged grill will really come in handy when you hang ribs, and have something else going on the grate. Great improvement for the PBC
Great looking chicken, definitely trying this Huli Huli sauce. Well done!
Aim'em and Claim'em Smokers Thanks James! This sauce would rock on pork, wings, etc.!
Love it.
Tolley Smith Thank you Tolley :)
Rus, I've seen Huli Huli chicken before but have never tasted it. Yours looks as flavor-packed, tender and moist as any chicken I've ever seen!!! The pit barrel smoker did a magnificent job! The periodic basting was a big part of your success I think, huh? Wow is about all I can say!!! Great job my friend!
Juanelo1946 Thank you so much John! The huli huli chicken has some really awesome flavor! I'm not much of a chicken eater, but I'll be making this again soon! We loved it!

Hello Russ...Sir I love the way you grill. The chicken looks fantastic with a beautiful color...
Ray Mack's Kitchen and Grill Hey Ray, and thanks brother!
Rus, I made this last night and I have to say it was spot on delicious!! My heat got a little high on my Weber after basting but other than that it was very good. For tonight I made a couple quesadilla's with the left over chicken and Huli Huli sauce, they were excellent!
***** Thanks for the feedback Todd! Really glad you tried it, and liked it :)
Made your recipe on my UDS tonight and on a scale of 1 to 10 it was an 800! Wish I could attach a picture to my comment. Thanks for all your videos.

Thanks, I appreciate you watching!
Rus, this absolutely Rocks. I was a little bit worried about the mesquite at first, but, brother. Looks like you got it goin on. Absolutely killer video! Man that looks insatiable.
Smokes A Rollin Thanks Russ! Mesquite is a strong wood like hickory, but as long as you don't over smoke the meat, it has a fantastic flavor, and this chicken was no exception. So good brother!
You rocked this. I've never seen anyone do chicken as gorgeous as yours. Absolutely magnificent.
Thanks Russ! I appreciate it brother :D

Kevin Buss That is great timing Kevin! I'm pretty certain, ya'll are going to enjoy this :)
Such a disappointment this Pit Barrel isn't sold in the UK, I'm convinced there's a huge market for it!
Keep up the great videos!
James Gray Hopefully they will expand to the UK soon! You should contact the company and express that :)
I did that very thing yesterday fella, the Vice President got back to me and said they're considering expansion but no current plans. :( Bad times! So difficult to get a good BBQ over here!
