Cook califlour almost to a mash potato consistency usr blended shrimp in the raw. Fine chopped onion and celery., one egg . Salt pepper garlic. Make patties coat with melted butter cook in oven flip half way through. Serve with pan seared asparagus sauteed in butter salt pepper garlic.
I think I’ll try it, Dot. Even for a dinner casserole' not necessarily to stuff the turkey. My family does not like turkey so what’s the use. They will eat the stuffing though. I might consider ricing the cauliflower. Hopefully, it won’t turn out too moist and wet. Thanks!
I know it's weird to ask but do you have a recipe for stuffing without the sausage and sage? My friend has food allergies and these are 2 of the ingredients that shes allergic to.
It's not a root vegetable, but chayote is a great low carb vegetable. I like to salt it before cooking to get rid of some of the excess water. It has a very mild, slightly sweet flavor, lots of fiber, and a respectable nutritional profile.

I'm thinking of eliminating the cauliflower.. keeping the rutebega chopped relatively small.. and just half the usual amount or less of a PKG stuffing mix... I'm trying to be less anal about carbs .. make it so others will eat and not even realize it's much lower ( moderation is my goal for some things now) in carbs.

Try ground chicken in place of the sausage. As for the sage, you could try rosemary, savory, poultry seasoning, or marjoram.

I think I would leave this as a side dish. I just worry that it would get too moist inside the bird and just turn into mush.
