Nicolas Damont, known as Werewolf of Châlons, Tailor of Châlons or Demon Tailor of Châlons (died 1598), was a French man who was executed for murder, cannibalism, and for allegedly being a werewolf.

This is actually not what this song is about. As the first line of the Chorus tells "1589, Peter Stump was killed in twilight", this song is about the Werewolf of Bedburg(Peter Stump) who was a German farmer and alleged serial killer, also accused of cannibalism, witchcraft, incest and being a werewolf. He confessed under torture and was extremely brutally executed on October 28 1589, alongside his daughter in Bedburg Germany.
