CAMEROONIAN GREEN SPICES - What you need to know

  • This video briefly sheds some light about what we call “Green spices” in Cameroon. This is basically a combination of leeks, parsley, celery and lemon Basil. It is usually sold together in bits at the local markets in Cameroon. These spices can be used all together in the same dish. However some recipes may require more of a specific spice.     Leeks:
    This falls in the family of onions. It has a similar taste to onions with a slight difference. It adds a sweet taste to your dish. It’s particularly used in seasoning Chicken, stews and sauces.
    Parsley:
    Can be used as a garnish in various dishes. It adds a fine flavor to your dish. It can be mostly used in seafood dishes, salad dressings, stews and sauces.
    Lemon basil:
    There are atleast 15 varieties of basil. However the common ones include ; lemon basil, holy basil and Thai basil. Basil leaves are used in seasoning pork dishes, pepper soup, and stews.
    Celery:
    Generally, can be used in seasoning every dish that has a tomato base. The flavors and taste helps to eliminate the flat taste of fresh tomatoes and adds an extra kick to your dish.
