I’m Pakistanis but I’ve tried few Indian dishes that had distinct flavor that hits the back of your palette but I couldn’t identify it.. and my mother in law probably didn’t want to share coz i asked few times she didn’t tell me this. Then I tried this at somebody’s house she told me what that flavor is. Of course I add garlic in my food but this method adds a specific flavor you don’t get otherwise. When I tried it I realized it’s what I tasted in my saas’s cooking…. I’m so happy coz this really elevates the dish…thank you so much
