Unlocking the Secrets of Chef Smita Deo’s Best Masoor Ki Dal Recipe | Quick & Delicious Dal Tadka

  • Masoor ki daal
    INGREDIENTS:
    2 tbsp of oil
    1 tsp mustard seeds
    2 tsp cumin seeds
    3-4 green chillies finely chopped
    6-8 red chillies broken
    1 tbsp finely chopped garlic
    1 tbsp finely chopped ginger
    1 pinch of hing
    2 onions finely chopped
    2 med. onions sliced
    2 finely chopped tomatoes
    Water
    1/2 tsp turmeric powder
    1 cup of soaked masoor dal (soaked for 2 hours)
    Salt as per taste
    Freshly chopped coriander
    3-5 tbsp of ghee
    1/2” cinnamon
    1 mace
    1 star anise
    3 cloves
    3 green cardamoms
    10 peppercorns
    2 bay leaves
    1 cup of soaked basmati rice (soaked for 1/2 hr)
    4 cups of hot water
    1 tsp of red chilli powder
    1 tbsp of butter
    1 tsp of cumin seeds and splutter it
    A sprig of curry leaves
    METHOD:
    Heat a pot/kadhai
    Heat 2 tbsp of oil
    Splutter 1 tsp mustard seeds
    1 tsp cumin seeds
    Add 3-4 green chillies finely chopped
    3 red chillies broken
    1 tbsp finely chopped garlic
    1 tbsp finely chopped ginger
    1 pinch of hing
    Add 2 onions finely chopped and sauté till they are translucent
    Add 2 finely chopped tomatoes
    Add half a cup of water
    Add 1/2 tsp turmeric powder
    Mix well
    Add 1 cup of soaked masoor dal (soaked for 2 hours)
    Add 1/2 litre water
    Once cooked, churn it well
    Add salt as per taste
    One good stir
    Shut the flame and add freshly chopped coriander
    Add tadka, but in butter instead of ghee
    For rice
    Heat 2 tbsp of ghee in a gunj
    Add whole spices: 1/2” cinnamon
    1 mace
    1 star anise
    3 cloves
    3 green cardamoms
    10 peppercorns
    2 bay leaves
    Add 1 cup of soaked basmati rice (soaked for 1/2 hr)
    Add 4 cups of hot water
    Salt to taste
    Stir well
    Cover it and on a medium to low flame allow the rice to cook
    For the accompaniment
    Heat a kadhai
    Heat 1/4 cup of ghee
    Add 1 tsp of cumin seeds and let it splutter
    Add 2 med. onions sliced
    Fry until the onions are golden and crisp
    Add salt to speed up the process of onions getting crispy
    Add 1 tsp of red chilli powder
    Shut the flame so the masalas doesn’t burn
    For the tadka/temper
    Melt 1 tbsp of butter
    Add 1 tsp of cumin seeds and splutter it
    Add 3-4 red chillies broken
    Add a sprig of curry leaves
    Mix well
    Add the tadka to the dal
    Plate it and serve
