How to Lunch With Julia Ziegler-Haynes

- Welcome to our brand new how-to series called How-To, where we'll learn to achieve a wide range of cooking and drinking techniques, recipes, and anything that won't light our hair on fire (unless that's part of the plan). Joined by musicians, chefs, artists, actors, writers, home cooks, and anyone with a skill set we'd like to learn, we'll explore a varied spectrum of skills that we can all keep in our back pockets to look like pros in any situation.
This week, we teamed up with artist and chef Julia Ziegler-Haynes, the mastermind behind the Dinner Bell, one of Brooklyn's most beloved supper clubs. We caught up with Julia in her kitchen the day after the Dinner Bell took place somewhere in Brooklyn, where she taught us how to make lunch with leftovers.
Joined at the kitchen table by her friends, musicians Merica Lee and George Michael Jackson from the Naked Heroes, Julia revives leftovers and the entire notion of lunch altogether as she whips up an impressive sandwich that pulls the trump card on PB&J: lamb-meatball sandwiches topped with ramp aioli and fennel slaw on homemade focaccia bread. When she wasn't caught massaging the focaccia dough, occasionally yelling at her guests, or waxing poetic about weird scents that turn men on, Julia showed us some serious food-porn shots that fogged up our camera lens. One handkerchief just wasn't enough to help us out on this shoot.

Love the lay back approach. I rarely cook the same thing twice myself and just work with what is in the refrigerator. It's always a little of this, a pinch of that and a smother of something else. Great video proving that any idiot, even myself, can make something awesome.

The sandwich looks delicious MINUS the fennel which has a distinct licorice taste. Who would destroy a lovely meatball sandwich with licorice?? Not sure what to use as a substitute but I would love to try this some time.
you can use shaved carrots or any mild/sweet vegetable :)

Anise is a lovely flavor, and goes well with almost any other flavor, it just takes an advanced palate (or someone who isn't a picky eater) to enjoy.

lol the fun part is that she's doing aioli which originaly comes from the south of france :) and in ail means garlic in french. It is usually one of the main componant of aioli, he she is making some lemon mayonnaise not aioli. But appart from that detail, she did such an amazing job !!! those sandwiches look sooo yummy OO
Even i don't agree with alioli "coming" from France (It actually comes from the Romans and is way more popular in the south and east of Spain) you are right about the recipe. Just garlic, oil and lots of patience!

I don't care if it's cliché and if the brooklyn hipster context is fake and cringey and wrong in innumerable ways. This lady does it cool, she's funny, I really like her, I don't care if she isn't perfect, yes it's (maybe unintentionally) funny that she pours yeast onto salt right after saying it dies easily, yes it may be overkill having your friends over for leftovers and calling it an exclusive underground eating experience, but... who else of us do that? She really does make having friends over for leftovers an exclusive experience. And I guess it's underground too.
She reminds me of my aunt. She knew how to make shared meals into the best time. She was so urban and knew where it made sense to make an effort to make coming together into an luxurious but also cozy experience. I felt lucky to be with her and I felt lucky to get to watch this.

Aioli has egg. Alioli is just garlic and olive oil typically.
fromelmstreet Like mayonnaise, aioli is an emulsion, a mixture of two immiscible liquid substances. It is therefore necessary to use a liquid other than oil so that the aïoli takes. In the traditional version, according to the etymology, the sauce is composed only of garlic and olive oil. It is then the juice of garlic that plays the role of second liquid. thank you.
Either way, you're going to have regional variation in what is and is not included in the aioli. Many regions put egg in their aioli. Thank you.
fromelmstreet do you know why people put eggs in it because it take time to make it the real way (you need a mortar do emosifie de garlic with the oil) and not because it depends of the region. thank you. I'm a cook by the way :)
