Super Easy Recipe Adobong Baboy - Bisaya Version (Pritong Baboy), Wandering Kusina - Episode 7

  • Adobong Baboy - Bisaya Version is your known pritong baboy, and Wandering Kusina will show you how to prepare this.
    In Cebu, commonly in the Bisaya speaking regions in the Philippines, this is how it is called, Adobo nga Baboy. It is with the absence of most of the ingredients found in the famous Adobo dishes.
    What makes this dish delicious are the components of vinegar, garlic and salt. It is boiled with all the ingredients and deep fried afterwards.
    This is best with rice and spicy vinegar dip with chopped onions and garlic.

    Here are the ingredients:
    2.5 kg of Pork, cut or sliced into cubes (medium to big sizes)
    Salt, enough to coat every pork slice
    Ground Pepper, 3-5 pinches
    1 Whole Garlic
    1 1/4 cup Vinegar
    1 litre of Cooking Oil for deep frying
    Meterials:
    *Casserole or Wok with cover
    *Ladle for frying
    *Thong

    I'm from the Visayas Area, in Negros Oriental. We don't fry the meat.We just let it simmer and fry it in its own oil, till it becomes chewy and tender with the skin a little bit crispy.We call that Adobong Tuyo, where we put in a jar keep it for days, with its own oil,and heat it when we need to eat.

      Yes po, yan ginagawa ng lola ko nuon lalo po pag bagong katay na babaoy nag tatabi po para gawing hinilisan tapos naka store lang sa jar sa sariling nyang mantika tapos kukuha na lang kung uulamin tas iinitin po.

    Dunno if it is just us, but what I practiced in Bohol is we used to sprinkle water while frying to make it crispier. And we do not use too much oil, we do not need to deep fry it.

    to make it crispy, when the pork is starting to turn into golden sprinke water. this method is used especially cooking chicharon and crispy pata. this works 😉

      totoo para mag crispy ang balat nang baboy dapat sprinkle water. Pero now a days nilagyan nila nang harina or corn starch para mag crispy.

    After being cooked by the vinegar, place it in the freezer for 30 mins before frying. Oil must be very hot but not burnt then fry. While frying, take it out from the heat and splash meat with water to make skin and parts crunchy then back to the heat. Thats how we do it in Cebu and Mindanao. Happy cooking.

    Tip para di masyadong matilamsik ang mantika,pag babaliktarin po,remove it from fire for a few minutes first,then ibalik sa apoy pag nabaliktad na..

      Agnes Aquino this is not really a bisaya version coz he used too much oil. Bisayang adobo will not use another oil aside from the pork’s oil itself.
