- Turkish Meatballs - How to make Inegol Kofte (Kofta Recipe)
According to a research undertaken in 2004, 291 different kinds of köfte (being the Turkish word for kofta) were found in Turkey and Inegol kofte (İnegöl - a town in Turkey) is one of the most popular of all due to its unique texture and flavor.
Mostly enjoyed with grilled chilies and tomatoes, this recipe will allow you to travel to the hometown of this delicious kofta dish.

• 500 g, ground beef
• 1 tsp baking soda
• 2 tsp lemon juice
• ¼ cup water
• 1 small onion (pulp only)
• ½ cup bread crumbs
• 1 tsp salt
• ½ tsp cumin
• ½ smoked paprika

I like how you alkalized the meat with the baking soda to prevent to proteins from bonding making the meatballs super soft and tender- you are brilliant. I use that technique when I make Bolognese sauce or Ragu of meat. Great recipe and tip!

That was interesting indeed. But isn’t adding the lemon juice will make the mixture acidic?
@@Fleed907 hi there yes it does make it acidic- however lemon juice is about a ph of 2- not enough acid to make it taste “acidic.” At a ph of 2 it lends light lemony notes to the protein. I hope that helps.
@@TheOtherSideOfTheStove thanks you for the tip… I always struggle with the oven cooked Kebabs as they come out dry and meat feels hard. I hope this recipe will make it tender.

Acidity as well. I add some sometimes when something is too acidic.
The concept of meatballs is international. The different flavourings from each country give the dish a national identity. One example is Greek Keftedes, Turkish Köfte and Indian/Pakistani/Afghan Kofta. I will try this recipe. for sure.

A questions please… at 02:13 when I added the spice and salt etc… the meat texture turned from nice and doughy to a sticky! It started sticking to my gloves and the bowl, is that normal?
Yes, it's ok, you can wet your hands while handling and shaping the meatballs. Just make small patties if it's easier.

What is the sodium citrate (citric acid+sodium bicarbonate) solution used for? Is it for emulsifier like in sauces?
It creates a unique slightly chewy texture in the meatballs. Normally only sod. bicarbonate is used for this, I'm using lemon juice to speed up to process.

Whats the ratio of bicarb to Lemon juice. Is it always 1:2?
Lemon juice is optional, just to speed up the process to dissolve and incorporate faster. 1:2 ratio is ok.
@@HungryManKitchen I normally dont use Lemon juice just bicarb and I let the meat rest over night for 24 hrs. Is Lemon used when you want to Cook the meat straight away or Within a couple of hours?
@@dr.andrewchiro yes, if I need to let it rest less time. If you can let it rest overnight, lemon is not necessary.

smoked paprika and cumin are not traditional in Turkish Inegol kofte. salt and maybe a little bit of black pepper. also mixing acidic lemon with alkaline bicarbonate doesn't make any sense. just use bicarbonate.
Thank you for commenting. Yes, the traditional recipe does not involve spices, even not black pepper, but cumin and paprika ensures a delicious kofte even if you are using a regular mince beef. When you mix lemon juice (citric acid) with baking soda together, they not only balance each other out, but also create carbon dioxide which makes the kofte puff up and rise, gives the meat a nice texture.
@@HungryManKitchen i recommend you to just use baking soda next time without adding the lemon juice. you will see that you will have the same or better texture and puffiness then mixing it with lemon juice that works against the benefits of baking soda.
