    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the CZcams channel Pailin's Kitchen.

      I'm wondering if you can help me remember a spice I bought two years ago and ran out of it almost a year ago.... I am desperately trying to remember the name of it and have tried to look it up but cannot find it.... but I did buy it at the Oriental Grocers and I have not been able to get out that way since , to look for it .
      If I describe it maybe you will help me with the name of it and I found it next to the powdered Ginger and it was even made by the same company when I bought it and it sort of looks like powdered Ginger , it even tastes like powdered Ginger with mustard powder in it , or let's say it tastes like a combination of sweet mustard and Ginger... so it was pretty spicy but it also is a medicinal and has healing qualities . That is why I was taking it.... now I cannot for the life of me remember the name at all .... but it is at the edge of my brain .
      Do you think you can help me figure out what it was , please ?
      Edit : I found it...its GALANGAL... which has a lot of benefits but I can't remember and so I'm going to have to find a vid on that... probably the channel of Dr. Paul Haider... I think he did a vid on it .

    As Pai said upfront, basically it’s the popular Chinese five-spice powder blend plus coriander seeds for a touch of Thai flavor. Glad she honors its origin and mentioned you could adjust the ratio to your taste. The Chinese philosophy is that you want a good balance among the five, with no single spice standing out. Then you can bring a well balanced fragrance or aroma to most dishes without overpowering their original desired aroma and flavor.
    Congrats for having more than 1.3 million subscribers now. I still remember how excited and happy you were when you got your first million. Keep up the great work!

    Just in case anyone missed it, if you are going for the authentic taste in chinese food like Char Siu, Siu Yuk, roasted duck/goose/chicken, you have to omit the coriander. The coriander will mess up the taste real bad. If you making thai food and the recipe calls for 5 spice, add coriander.

      I've read that if one doesn't have Sichuan peppercorns and use instead some white or black pepper the coriander seeds brings the citrusy note to simulate the Sichuan

    Just made this spice blend and it is a ticket to flavorland for sure. Couldn't find any sichuan peppercorns so I used chili flakes though, but now my stir fry doesn't last anymore :D

    This was great this spice combination is not easily available in the Mid East so thank you for the demo plus it is the main ingredient for a favorite which is 5 spice fried chicken really yummy with soy sauce,thanks again...

    I've also seen this with Cardimon, Ginger, other peppercorns, and orange zest powder or peel. The way I think of the "Five" spice is the category of the spice...
    1) Anise (several forms)
    2) Cinnamon
    3) Pepper (several types)
    4) Clove
    5) Aromatic (Coriander, Cardimon, Ginger, Citrus).
    So if your missing one or more ingredients you can substitute some though she is right about the Anise, Cinimon, and an Aromatic! I have a food allergy to peppercorns so I subbed with Cumen.

    Star anise 1 whole star
    Coriander seed 2 tsp
    Clove 1 tbs
    Fennel (optional) 1 tbs
    Peppercorns (optional) 1 tbs
    Blend!

      3 tsp ground cinnamon

    I personally do only 2 tsp of cinnamon since otherwise the cinnamon is just too strong. With 2 tsp the szechuan peppercorns and star anise are a little more pronounced which I like.

    I once had a spicy chicken in Bangkok streets and i love the herbs and spices on it. Do you know what those spices are?. They also used it in KFC spicy chicken bowl

    Does anyone have any recipe that incorporates dried orange peel granules into their 5-spice powder? I've heard the southern Chinese use granulated dried orange peel in their recipe for the powder. I don't know how many teaspoons of it I should use, or if I can add it as a 6th spice, or if I have to take something out.

      I heard some very good things about the actual seed of aniseseed.... at least that's what I think I'm talkin about and people were saying how beneficial it is and also as a product to keep the face skin from aging or to help reverse or stop any wrinkles.... have you noticed any benefits from taking the aniseseed ?

    Funny how I consider your optional spices to be my must-haves hehe As you say, there a many variations. You wouldn't happen to have a recipe for a Thai stew (don't know its Thai name) made with 5-spice, whole eggs and fried tofu, would you? My Thai friend made it for me a long time ago and she is hesitant to share the recipe...haha

    Pai, do you grind your spice and coffee using the same grinder? I attempted it once, then I found the aroma hard to get rid of after grinding spices.

      You can grind some rice in it, that will help to clean your grinder and absorb unwanted aromas.

    I tried buying premade in supermarket in Canada and the prices were ridiculous for a small amount. I found a huge pack at a one of the new huge Asian grocery stores. Its was imported from China and I'm afraid to use it, as im wondering what else they added to it, as it was so cheap .
    It has cinnamon, star anise, ginger, fennel, and cardamon. i have heard of ginger in it but not cardamon

    Many countries in asian side was ruled by indian kings that is king Chola, king Ashoka, king Suryavarman n many more, proven by hiistory. Bodhidharma /bogar /Damo went to china after he got vision of buddha, instructed him to go to China to help chinese people who are dying to unknown virus. Damo went n teach chinese people about herbs, tai chi, shaolin, karate, kung fu, ying n yang, qiong many more. I m not vry sure but it seems he was poisoned by his followers when he wanted to return to india , by killing him there in their soil, they believed that his soul will remain with them for guidiance n blessing. Indian spices are 100% herbs, this is how the usage of indian herbs spread through out the world.. I think u are well educated, why dont u do some reasearch n find out the truth. Whatever it is the truth will prevail.       pricilla priyadarshini sharma U r right but nowadays most of us are not well aware of that ancient stories as it has become a history....n may b that's why she even think it as a chinese spices...coz they r used in china n some other asian countries now. After all china korea thailand japan n all are very much related n similar in their clothing,style,food,etc.
