I thought you needed to boil the water anyway? I'm using filtered water, BUT, with rapadura sugar, loaded with minerals etc.

.. tip-- FYI on "chlorination " .. they're( public utilities ) using chloramine .. which does not evaporate & must be filtered out .. it staying active in the water supply indefinitely .. ( and in your body .. )

Is the mineral water needs to boil also or the mineral water from grocery can use directly?

Hi, I noticed you used a metal spoon to stir the kefir, I had the understanding that the metal is not liked by the grains so to use a wooden or silica spoon

If its non-reactive like stainless steel its fine. The same taboo is spread by some sourdough makers but not by real bakers who have worked with it for a long time. Its amazing how some myths spread.
