Think of it as if a veteran chef said his four favorite meals were Kraft Macaroni and Cheese, Hot Pockets, Dino Nuggets with Smiley Tater Tots, and Chef Boyardee ravioli.
None of those are BAD, by any means! But you'd have to wonder, this is his passion and livelihood. He has access to so much more food than us common people and yet... these most basic things were what impressed him and became his favorites??
I've heard of so few of these movies, but as a movie lover, I am now so encouraged to watch them since people who should be more familiar with better movies than I am like them so much.

I’m surprised at all of the commenters calling them pretentious for liking artsy obscure foreign films. You do realize that Poor Things is a Lanthimos movie, right? He makes arthouse films that are weird and (to the mainstream audience) obscure, while being inspired by films that are artsier weirder and more obscure. Have you ever seen a film directed by Lanthimos? Like what did you expect? For them to have the most dull film tastes ever?
They wouldn’t even want to work with Lanthimos if that were the case. Due to the fact that these famous actors wanted to work with Lanthimos, it’s no surprise that they’d share the same tastes. Also, those films are not even that obscure. They only seem obscure to you because they’re foreign, because you won’t even bother to look at anything that’s not American (Anime doesn’t count). They’re actually classics that are well known all around the world and in the film industry. In addition, all your favorite American directors were inspired by the very same filmmakers they mentioned. Scorsese being inspired by Bresson. Lynch being inspired by Bunuel. Wes Andersen being inspired by Greenway. Safdie Brothers and Paul Thomas Andersen being inspired by Cassavetes. Them all (including Baumbach, Ang Lee, Soderbergh) being inspired by Bergman and Fellini. etc. One of the biggest reasons why these actors manage to choose great films to star in is because they have a good taste in film - a barometer to help determine which movies are worth acting in, movies that may end up being regarded as masterpieces and classics in the future. Did you really think Dafoe said “I’m gonna go do The Lighthouse because it aligns with my taste in films like Shark Tales or Cars”?

Especially the older they get and/or the more years they spent in the industry so far and/or if they attended cinematography or acting school.
All the older actors name films that were once popular (even if for a moment or iconic) in their youth, especially when they started getting interested in cinematography. The longer the actors have been working, the more films they have personally felt to watch to learn from other actors or didn’t want to sound dumb between film people in the industry. Everyone who attended film school literally was required to watch multiple films a day, sometimes the same one multiple times. Not to forget that at these festivals they watch all films released.
Last but not least, gender: Males are usually more inclined to active films in genres such as action, combat, Mafia, war, heist, vehicles, addicts, fighting etc stories. They often name two films from their youth or childhood and it just makes sense because males even today, always all over the world, enjoy this stuff a lot and make games about it too and idolise the characters because they want to see themselves as as cool as them in adulthood (they don’t necessarily want to be addicts or criminals! I am referring to the “mainly” or “independent” and “though” vibes).
Females, I still have yet to hear one name similar kind of film except a few 85’+ classics like Godfather and Malcom X. We don’t necessarily incline to soft things but more complex, visually appealing, emotional (and soft). Regardless of how ugly and twisting they are.
Many films are in between as well of course! This is just the average preferences per person.
