Love the fact he has a real kitchen. No crazy $15k range, $10k fridge and deep freezer, or any other type of set that they usually do a cooking show on. Just regular, well-used appliances and a house that looks like people live in it, kids school projects on the fridge, a regular spice rack thats easy to get to, and just a genuinely honest kitchen.
You know he shopped around for that smoker though, priorities!
He lives in a much nicer house now, and a much nicer kitchen. This is an old old old episode.

I’ve owned the book Charcuterie for a long time, and was able to attend a pork preparation class put on by Polcyn where he broke down an entire pig and cooked sausage, terrines, and other tasty goodies. Buy the book. It’s money well spent.
The meateater crew has inspired me to hunt, butcher and cook my own wild game. Just did a whole smoked and braised venison shoulder instead of a turkey today for Thanksgiving. It was amazing!

I really appreciate this episode. Meateater’s nuanced and approachable stance on wild game and conservation is what inspired me to begin my adult onset hunting journey. However, I started watching Meateater in the later seasons, after Steve already had all of the trappings of his brand’s success. Seeing Steve in this setting as opposed to his much fancier current home definitely renewed my vigor and hope for a successful hunting lifestyle in the face of rampant hunting based commercialism. Thank you.

Hey man! I just found/ followed your channel. You do a good job.
I would feel obligated to sit there staring intently at the food as I ate it, making exaggerated noises of enjoyment, and thanking him profusely. I would be a total weirdo that nobody wanted to come back to the next get together, just to show my appreciation for the absolutely insane amount of effort he put into each of these dishes.
Steve: I went to the other side of the world and tracked this chili for a week in the blistering cold uninhabitable mountains. I then had to hike myself, all my gear, and the 70 pound carcass back down the mountain to butcher and package it all night, then ship it to my home where I vacuum sealed and froze it just to begin the process of cooking it over the last 3 days for you. Me: Cool! I brought some chips.

As a Native American who hunts and fishing to nourish my family I really admire Steven with his shows and cooking and eating everything he harvests he’s the real dude I jus wish I can meet him and give him some of our recipes for all the game we take for him to try especially for the jackrabbit our jackrabbit recipe is out of this world

Beans are all about the broth. Take those same ingredients and blend them into your chicken stock. Get that stock hot. Use the stock in a blender to help bring your seasoning together. Take a smoked hammock or pork neckbones and cook them down in water. Once they cook down, drain the water and add the meat into your beans. Clean and drop a whole onion into the pot. Take it out once the onion starts to break apart. Go slow and low until your beans are soft. Get some bread and get it!

as someone who has cooked professionally for many years I can tell Steven is not a professional chef, but he really does know his stuff, and he is pretty impressive for just a home chef.

I love your life. I was brought up living the Chicago lifestyle, and its not a style I would have chosen for myself. My son and I (veterinarian student) live our adventures thorough you til we can create our own. Im planning our 1st hunting trip in 2022, which will be his 21st birthday, and my 50th. If you want to take us for an episode we are more than ready. Lol! Seriously, congrats on your success by doing what you love.

I dont know about with a marinade in with it but to keep meat juices from ruining the seal ..lightly freeze it first before a vacuum seal it. great show

As someone who loves to cook and eat wild game, (but has never been hunting) would love to meet steve, and love his cooking style, I'm poor folk so it'll never happen
I was a hunter and I grilled meat but when I started watching MeatEater, since episode one I rethought everything I ever learned about hunting everything, and I remember when he was just a TV show coming out and now he’s the definition of hunting. He’s converting everyone and getting everyone on the same page all across CZcams and Netflix and the internet and I love the man for it. Before people thought of The Hunger Games or The Revenant when the word hunting came up. Now- 90% of the time it’s MeatEater
