Sourdough Pancakes Recipe

  • This is an easy, no fail sourdough pancakes recipe. If you’ve got sourdough starter you are ready to make these! (You can check out my easy tutorial on making your own sourdough starter-posted May 5th). These simple pancakes make for some of the fluffiest pancakes ever, and there’s a secret to that so make sure to watch! Please give them a try and let me know what you think.

    Here are the conversions:
    42 g unsalted butter
    8 oz. sourdough starter
    8 oz. buttermilk (may use milk)
    2 eggs
    25 g sugar
    5 g vanilla
    180-240 g flour
    5 g baking powder
    5 g baking soda

    look great. perfect texture. maybe I'm a sourdough snob but, all I could taste was the powder/soda. 😪
    Edit: Fun Fact (and if someone already posted this, my apologies...) - made these again. *Left the batter on the counter 3-4 hours to let the starter rise (about 1.5 times in size) naturally! no baking powder. no baking soda!* Gently transferred to refrigerator. set on counter an hour (or two) before cooking. light. fluffy. delicious!! 😀

    I made these this morning! I left the batter in the fridge overnight and added more milk and frozen blueberries in the morning. So delicious!! Thank you for this recipe!!

    I made them with coconut sugar and overnight in the fridge, they were soooo delicious❤Best sourdough pancake recipe so far, Ive teied a couple before, and this recipe is my favorites!
    Also really recommended trying coconut sugar, it was perfect in this recipe

    Wonderful pancakes! I just made these. I'm very new to the sourdough community and this is the first thing I've made so far. My husband raved over how great they are. I can only eat little bits at a time and was still able to eat two. We will definitely be doing this again. Thank you. I think I have enough confidence now to actually bake some bread.

    So good. I used the same way you did in video, only half, because it’s just two of us. They were delicious cooked with a little butter in cast iron. I like mine crispy on the outside, my husband likes his softer, and we cooked to our own tastes. Beautiful when they were done, too. Thank you.

    I’ve just tried making it, and they are so good. So perfect, because, I always have some sourdough ready. I feed my sourdough every Saturday, and I never throw away those excess sourdough.     I’ve made this recipe quite a few times now and it truly is amazing! I like to substitute 1/2 cup of maize meal for some of the flour, to give it that nice texture. Otherwise it’s perfect!! 😍

    I am glad you are confirming my suspicions :) I am making lots of different dough recipes and wondered how pancakes would do with sourdough. I have switched to sourdough in EVERYTHING, because it makes the food much more digestible and tasty. I made a one day pizza the other day and it knocked my feet out from under me. Sourdough starter, combined with extra yeast and voila, a kickass pizza dough (with just a 24hr sourdough starter).

      @@ilamitchell4704 make sourdough starter, at least 5 days old. Turn on oven light. Measure 650g warm water and use 100g of it to stir in sourdough and one tsp of yeast, let sit for 15min. 1kg white flour, 25g salt, mix dry, then add the 550g water, mix, add the 100g starter/yeast and kneed with 15g virgin olive oil. NEVER ADD MORE WATER unless you used high protein flour.
      Let covered dough rise in warm oven (with just light on) for 2hrs, then make about 6 dough balls. Let balls cure for 2-5hrs (depends on environment). I recommend to watch them double in size, try make dough from different stages.

    Made the 30 minutes on the counter and it was the best tasting pancakes. I don’t like pancakes normally, hate the raw flour taste. To me these pancakes had almost a sweet/sour/savory cornbreadish, muffin, fluffy but also textured taste and feel. So hard to describe. My starter is three days old and first time I dumped some out, wanted enough saved up to make pancakes

    If you mix some cornmeal into the pancake mix & then add some fresh blueberries, little green rings appear around the berries in the finished pancakes. Gave my kids the giggles to see all those colors in their food!!

    Hello! I’m very new to sourdough..I’m just wondering, when we use the discard in recipes, do we wait for them to come to room temperature, or we can use them straight out of the fridge? I keep my starter on the counter but will be storing discards in the fridge. Thanks!

    I "veganized" these with flax eggs, almond "buttermilk" and omitted the oil. About 1 hour on the counter. They were delicious!! Thanks for sharing.

    I'm guessing that if the starter is already the consistency of pancake batter, after adding the eggs and such, then flour does not have to be added. Nice vid! The pancakes look so good!

      You didn’t ask me, but are you saying your starter is so thick that after adding buttermilk and eggs, it is now the consistency of pancakes batter? If I’m understanding correctly, your starter shouldn’t be that thick to start with. If your starter is not properly hydrated, you should need the flour as stated in the recipe. I hope I’m understanding and this helps. :) (starter should be 1/2 flour and 1/2 water, by weight)

      @@G-grandma_Army My starter is inconsistent now, because I don't measure the flour and water anymore. It's been good and healthy for a long time now w/o measuring🤞, but I do keep it about the consistency of very thick pancake batter most times. I use very little starter in bread dough, because I make the starter out of whole wheat whole grain flour, so that the bran in it does not affect the gluten too much. As far as pancakes go, usually same ingredients but no recipe. They can turn out quite different each time.

    I made these last week. So good and I’m more a waffle girl. If I make a batch to keep in the refrigerator; how long do you think it will keep? That will tell me if I should double the recipe! Thank you for the recipe!

    I tried it and added slide banana on top. Not too bad, my husband said a bit sour.
    May I know do u add oil onto your frying pan, when u fry your pancake?
    Your pans looks special, no electrical connection. How to heat it up. Make me wonder. Thk dear.

      Yes, you don't really need salt, baking powder or baking soda. All you really need is flour, egg and milk. The rest is optional.

      I used half and half. Turned out great! Used a bit of milk to get to right consistency after sitting 30 minutes.
