Hello! I live in Sweden and I shot more than 120 moose in my Life. A tip, Cook the roast slowly, in 110 degres celcius and take the meet out when it´s 60 celcius. It´s tender and juicie.
I´m verry impressed of your gardening skills. For me, who dont have green fingers, its a miracle what you did. I lived in similyar climate for many years and I nearly dont belive it. I coluldn´t grow carrots.
Exscuse my poor Spelling, It´s a long time since I Went to scool.
Moose itt´s the best meet and you never get tired of it. If you dont have pigfat just put some Cream in. It really helps.
God luck to you. I nearly lived your Life when I was Young.

Here's a little heads up from a Farmers granddaughter and I processed a lot of deer and bear elk moose,, I used to always use saran wrap and then I found out this little fancy trick that My grampa taught me and then my professional friends who own a meat butcher shop.. You know those little clear pieces of plastic that you see wrapped around Pieces of meat and then it's wrapped in butcher paper.
Well if you get fold over sandwich bagges they're the same form of plastic you can put your one pound increments in there fold over the flap and then wrap it in butcher paper.. Also no extra cutting of the saran wrap
Works perfectly and quite honestly cheaper to do And Absolutely great for keeping freezer burn out if you don't have a food saver which I also have one of them.. The fold over bags are just perfect for having one pound portions And will even hold 2 pound portions When the bag is full...

hamburgers look good. My tip for today is I always cook extra hamburgers and put them in freezer for a day that I am feeling under the weather or want a fast meal. I do the same for meatloaf and roasts. This saves times and the energy you use to cook.

garden333 In the Summer I always grill out & I will cook an extra dozen burgers & freeze them so my daughter can fix herself a burger while I’m asleep at night.
Freezing cooked portions is a really great way to conserve your energy especially as one gets older (63 this yr, got another 40+ yrs to go, longevity genes in my family).

When I package meat, I always label the packages with what is inside and the year using a permanent marker. For instance, "Moose Burger 20". That lets you know what is inside of each package without having to guess. It isn't too hard figuring out what you have with the first animal of your first year, but as time goes on, and you get more and more game, you will find that good labeling is essential in keeping thing organized.

Also if you see their 30 days eating challenge videos, all they had to eat in terms of protein up until then was salmon. They'll be fine.

I am a meat cutter and was itching to get in their to give ya a hand and show you some tips.Your brown handle knife is my favorite style. At the 17 minute mark when you had the leg boned,if you have a meat saw even if you only saved the marrow bones that gives great stock. If you learn the bone structure of one animal then all animals are fairly close.Love your ways of sustainability !

Good job and wonderful to see that you have and take the time to do the job like you do. I hope to taste Moose meat some time, maybe when I go to Norway or Sweden. Victorinox is so good.
