    I used to work in a wonderful bakery, and every morning, my job would be to set up all the ciabatta dough in to strips to be cut by the day baker. After that all I made was viennoiserie, but I've been looking for a recipe where the dough flows like it used to in that bakery. When you transferred your dough to the table, I knew I found the recipe I've been looking for. Grazie.

    I've been watching a lot of bread making videos in lockdown and having no success at all, until I tried this recipe. I had to double the rising time because it has been a bit cold here, but the bread came out perfectly. I made 8 rolls instead of loaves and they were so soft and so flavourful with a wonderfully crispy crust. A million times better than shop-bought! Thank you so much for posting your recipes for us to enjoy :)

      agreed - never baked a loaf of bread in my life and this recipe was so easy to follow. Used crappy old plain flour and still came out like a professional baker had made it. The recipe is the real deal.

      Thought the same .. all other recipes asks for 20 hours !! So was surprised at this ... I usually make my bread this way but never have the bubbles in it.. so I'm sceptical

      This way you get okay Ciabatta. With 20 hours fermentation you get very tasty Ciabatta. There is absolute zero more work, just better planning.

    Made your ciabatta recipe several times now, my family loves it. I use only half tsp dry yeast per the recipe in your video, seems to be enough for nice fluffy bread. I am making some today again, but I don’t wear a necktie like you, that’s next!

    Thank you very much for sharing this simple yet wonderful recipe. I made it this morning (Easter Sunday). The air pockets, ciabbata bread is so famous for, turned out really well. One of them, as my husband commented, even looked like a love heart. My children were ecstatic when they were eating the bread using the adjectives amazing, divine, mouth watering to describe it!!!

    My first attempt just now. A little 'heavy' so need to let it rise more. I waved a propellor hand but didn't change anything. With goat's cheese.

    Hey, this works great ! I used a full sachet of yeast (7g) , and made 2 larger loaves (so gave them an extra 5 minutes at 200 degrees). Today I added 30g olive oil and increased the 200 degree cook time by another 5 minutes. Even better taste and texture! I hope to do this every day, although bread making ingredients are getting very hard to obtain.

      Hi. I just followed Cuoredicioccolato’s recipe. If you check all the comments there seems to be some (=a lot of) confusion about the exact amount of yeast to use. I used a whole sachet on the basis that too much is better than too little, and it worked spot-on. Adding extra oil doesn’t seem to need extra flour, as adding water would.

    Among all the ciabatta recipes i’ve seen i thought this one was the easiest to follow. I made this bread yesterday and everyone loved it, the only problem was i should have made more! Thank you for the simple, yet delicious recipes! I feel like a professional baker now 😄

      ali nejad I’d say it was crunchy, but i was waiting for the bread to get the brown colour. Nevertheless, it tasted as a real ciabatta! Stay safe and happy as well!

      ali nejad trying lowering the temperature to 350 and cook it like that. Or when its done and cooled. Place it in a zip lock bag for a day. That should soften it up.. sounds like your looking for a pita dough recipe. Not italian bread.

    Thank you for the video. I will just let everyone know that 1/2 teaspoon of yeast is not enough for 3 hour rise time. I used 7 grams and it really helped

      There is more than 1/2 tsp in this recipe.. watch as he sprinklesit into the water at beginning. Typically pkgs of yeast hold btween 2 and 2 1/4 tsps yeast

    Please be aware that 7 grams of dry yeast does not equal 1/2 teaspoon. It is equivalent to 2-21/4 teaspoons by volume, or 1 packet. Rise time will be about 15 hours with only 1/2 teaspoon.

      Might be worthwhile adding this to your video cuoredicioccolato. Pretty glaring (monumental) error. I'm presuming that anyone using your 1/2 teaspoon would have binned the mix presuming they had not made it correctly when it did not rise. Thanks Bernadette, much appreciated.

      The water did mot add up either. I used a measuring cup and the flour mix was bone dry not sure what i did wrong

      I think you in Italy have very protein rich flour that is necessary to have big bubbles to keep up on not fall together, resulting in a compact bread. So as an example, in Sweden I’d need to buy Special flour.

    I just want to let you know I’ve been making this every day. Thanks to your instructions on the yeast replacement with my starter. I prepare at night before I go to bed then wake up and bake. My oven is off so I bake 500F for 10 then 450 for 20-30 depending on the loaf size. It’s the best. Everyone that asks for the recipe I just send them to your video. Grazie absolutely the best!

    Beautiful soft lovely ciabatta bread, my favourite, we buy ours from Coles it's imported from Lebanon i believe. I've not seen a no kneed bread done be4.
    I'll have mine with butter and tomatoes or home dried tomatoes in olive oil yum.
    I've been looking for a easy bread to make at home, i'm going to make some and i like the 3 loaf idea. Thank You.

    MAMMA MIA! ESPECTACULAR! I made it with 1/3 whole wheat flour and adjusted the water accordingly... refrigerated it overnight and let it stand at room temperature for 3 hours...it has it ALL, flavor, texture and simplicity! CONGRATULATIONS Chef! Greetings and blessings from 🇲🇽 Mexico.
