He'll say "Oh look! It's Santa Clause" when you grow out your beard, and it's in a pretty lighthearted tone for the guy, I think he's just nicer in the early chapters, probably to try and get on Arthur's good side

He's such a cool character, it'd be nice to start a second playthrough and hear him cheekily insult Arthur and you just go "hah, that was a good one Micah" instead of "you rotten sonofabitch, rat bastard"
Despite that, I think Bill is one of the coolest looking characters in RDR. He has cool outfits, especially the one with his brown leather coat. Also he looks kinda like Trevor, but fat and with bigger beard + alot more stronger and not crazy.

You get a lot of voice actors to do a one-liner for an event where the player arbitrarily decides for a long hair, and you put that in a game that is already filled with memorable lines, and you get this masterpiece of a game.
