      Hi Mary, I've been making strawberry jam without using store bought pectin & using a natural pectin for years & wanted to share it with you. I cube 3 honeycrisp apples removing the stem & seeds only & 1 whole lemon only removing the seeds (large or 2 smaller ones) cubed & put them in a saucepan with 1/2 cup of water, cover & bring to boil, stirring occasionally (med heat). Once it comes to boil, cook it for 30 minutes (stirring occasionally to make sure it doesn't boil dry & burn) until the lemon rind is soft. Pour into mesh strainer with a bowl underneath & using a rubber spatula press the fruit until mixture in strainer is dry, making sure to periodically clean the under side of strainer into bowl with rest of liquid. Once complete, pour strawberries (I pulse the strawberries in a food processor, I prefer the small bits than mashed. I use 3 of the large clam containers) in with the pectin mixture & stir, then put in a large pan putting half of the sweetener in at the beginning & the remaining towards the end of cooking the jam. I've found it will take less sugar or whatever sweetener if it's done this way, I use less than 3 cups of sugar. I water bath the majority but keep 8oz in the fridge. It will have a apple lemon flavor & not a strawberry for 24hrs but after that you can't tell it's anything other than strawberry jam. You're getting vitamins from 3 kinds of fruits & drawing out the natural pectin from 2 fruits. It's a lovely jam that has a great consistency & is fantastic on homemade scones & BEST if you make clotted cream & honestly the only way scones should be eaten! (my opinion) if you've never had clotted cream oh my you will love it! It's so easy & is so good for you especially using raw milk! I hope you give it a try & let me know what you think?

    How thorough (and very kind) of you to give measurements for substitute sweeteners. Thanks to your videos, I have enough confidence now to water bath can. Just finished canning some peaches and peach jam. Earlier I did dilly beans and pickled jalapeños. Next up are pickled banana peppers-soon as they get a little bigger. Thank you so much for helping me gain a new skill.

    I used to make guava jam and jelly and didn't ever need to use pectin because of their high natural pectin. I also never used the whole amount of sugar the recipe called for. Thanks for this video.

      IKR 4 cups of sugars seems crazy to me. I added 1 cup as the fruit was a little too tart, and I felt panicky LOL so then I took some away. I just don't get the need for sugar...it's fruit..its sweet enough as it is. That's it's beauty! Just my 2 cents :)

    Mary, I just did this recipe. Used 2 cups each of peach, blackberry, and strawberry. It worked even with store bought lemon juice and home grown mandarin orange peels.Didn’t have lemons. Let me tell you, my boys really love this jam! Even better with no pectin. I just love your recipes! Thank you!! 🤗

      It's true. I've just started watching and these are so helpful. I'm living in transitional housing. I'm not allowed to cook with anything except a microwave, and can only have a minifridge. Mary's videos are very thorough for all levels of ability and access to things.

    Monk fruit is one to one, I always use it in my jams and the result is very good. I also include some blueberries instead of pectin. Green apples also replace the pectin. Thank you for this recipe 🌹

    Dear Mary - I just used Your video for procedure plus ingredient knowledge for My own batch of very reduced sugar Blackberry Jam. It's still lava hot in my recycled jars but when i pulled my spoon out and let it cool, the jam set on the spoon. Thankyou very much and also thank You for being so happy in Your videos.     I don't add any kind of sweetener in jams/jellies. They are sweet enough without the sugar. It's healthier for my kids. When they do get jelly with sweetener and they can't stand it. Also, a great thickener for making jelly is Chia seeds. It is a really great substitute if you don't like the lemons.

    I use the Graniteware water bath canners on my glass top electric stove all the time. What I did, not knowing about the suction problem but to protect the pot itself, was to find some old cast iron grates from a gas stove top and put the canner on top of those. Takes a little bit longer to heat up the water, but works like a charm!

    Thank you Mary for sharing this simplified jam recipe. I was always intimidated with canning but you gave me the confidence to try it. Also do you have a recipe for apple jam.     This looks pretty yummy, but I have to watch the potassium (I have hyperkalemia...) ...can't have a lot of citrus. My friend from Korea made strawberry jam without pectin or lemons. She simply added her sweetener (sugar) and cooked the strawberries down until they were reduced to the consistency of gravy, then poured it into her jelly jars, the lid went on and.... Once it cooled, it was perfect! One pound of berries made about 1 cup of jam... it does need to be kept in the fridge...

    As a kid I used to love watching cooking shows and would pretend I was starring in my own show. My grandmother used to can, but her health and cognitive function s have declined so much I worry asking her for advice will result in improper canned goods so I needed to relearn how to do ir. Your channel has so much nostalgia for those cooking shows when I was a kid and was very informative so thank u for taking the time to share. This will be my second year water bath canning and my first year making jams and jelly so I'm glad I ran across your channel. Would the ratio of Stevie still be the same if I were using a pure powder stevia instead of a liquid? That's the kind d we use for coffee and I can't even remember what the ratio it would be for my coffee if sweetened with sugar, I've been using stevia in it for years.

I have just 1 question- what is your take on using real lemon juice compared to store bought? Everything I see says to use store bought bc of acidity. But I don't want to use store bought as it has added ingredients.

    Hi Mary. Love all of your videos they are super informative and you make the recipes extremely easy to follow. I've made this jam once and it turned out great. I was watching the video for a refresher and a question came up. If I want to can and make it shelf stable, do I have to go through the canning process right after making or am I able to make the jam, jar it, and can at a later date? Then you so much for all of your videos.

    I used your recipe and changed it up a little bit. I put one and a half cups of chopped up jalapeños. It taste amazing and it’s going to be so good on top of pork chops or a block of cream cheese. Thank you so much, I love you recipes. I’m just starting to learn how to canned

    I canned strawberry jam using your recipe today. I put a jar in the fridge and it's still a little runny. So now I'm stressing over whether it set up. Normal for a hime canner! Thank you for this video Mary!

      Did you do the freezer test before you canned it? And when you did that test, did it gel up? If so, it should be fine. If when you did the freezer test and it didn’t gel up then you would’ve needed to cook it for another few more minutes. But don’t worry. Even if it’s not perfect, I’m confident it will be tasty. And often, homemade jam like our grandmothers made without pectin is usually a little more loose than jams made with store-bought pectin. Love, Mary

    I was trying to make my Grandmother's Watermelon Rind Preserves, but I didn't know to use pectin. Grandmother loved lemons and put lemon flavor in everything. She made Sweet Potato Pie with lemon extract. No spices. She made candied yams that same way. Now I know your secret with lemons. Thanks so much! Now I'm going to try Watermelon Rind Preserves again and use lemons.

      How do you make watermelon rind preserves?

      First, you cut all the pink watermelon up. Then cut the rind into chunks and peel the outer skin off. Then cut it into desired size, maybe 1" pieces. Then measure how many cups you end up with. Add sweetener of choice and either pectin or juice and rind of 3 big lemons, 1/2 cup juice. Cook until al dente or fork tender. Remove lemon rinds. Can or refrigerate.

      Hi Haylee, No problem. You will want to cook it a bit longer - usually about another 10 minutes. Then try the gel test again. Also, keep in mind that sometimes old fashioned pectin free jam may be a bit loser than jam made with commercial pectin. Our moms and grandmothers new that they were going to have to cook it a good while to get it to gel. That is why a lot of people today just prefer to use commercial pectin. But I really like to keep the traditional skills alive so that people will know how to do these things if for some reason in the future commercial pectin was not available. Hope this helps.     I’m a first time canner and I loved how you did everything step by step. I have a few questions can I use a regular pot? Do I leave rings on if I’m gifting my jam?

      A regular pot could be used, just watch the jam so it doesn't scorch on the bottom. A Dutch oven distributes heat evenly so people prefer that type of pot. And if you gift the jam, give the person a ring so they can close the jar.

    Hi Mary!
    Love your videos so much. Do you need to add lemon if you're not going to can? I made a jam with just the fruit and stevia and it got a pretty good texture when I let it cool. So, just wondering, if there's other properties to the lemon juice that make it an essential ingredient.

      Great question! The lemon helps add some natural pectin but if you find you do not need it based on past experience, you can leave it out. Love, Mary

    Hi Mary,
    Thank you so much for this video! I am very excited to try it. I have been on a no sugar diet for 10 years and love when I can find a way to make traditional foods without sugar. I have been canning for 15 years and have not bought a store bought jar of jam since. I have plums in my freeze and strawberry, black berry and raspberry mix. Can I do this method with both the plums and the triple berry mix? They are all from fresh fruit frozen, not store bought mixes. I would be using 3 cups of monkfruit to sweetened them, unless I could use the 1 cup of grape juice. Please let me know.

      Those fruits will work great. And yes, you can use the Monk fruit, but with a no pectin jam I wouldn’t recommend using juice. The reason is you want some of the liquid to evaporate to help the jam become thicker. But if you want to use store-bought pectin, then yes, you can use the juice. Hope this helps.     Hi Mary! Love your channel. I have two questions.
    1. Won't the rinds of the lemons make the jam bitter?
    2. Can I substitute orange juice for lemon juice?

      The reason you add lemon juice is because lemons are very rich in pectin which is required to make the jam set. So despite what she keeps saying she IS adding pectin!!!

      Why so nit picky --- fresh pectin/. Versus store bought --- what is the problem --- if you want store bought and can afford it -- go for it. I see no problem with the lemon.

    never removed the screw top lid as it is hard to give for gifts without the lid or send to people. Been making jam for awhile now & never had any problems. Plus when my friends give me jams the screw top lid is always on. I will sometimes thicken my jam with corn starch. It works. Thanks for the video will start using the lemon rinds now. But I will leave the screw top lids on.

      Yes, I understand completely when you are giving it as a gift. Often what I like to do is include a white plastic storage lid with the jam. So that when it’s given as a gift the person can use the white storage lid after they open the jam. Love, Mary❤️🤗❤️

    I just came across your channel the other day while looking for wb canning recipes for newbies. Excellent videos, you are so informative and have been so helpful!! I’ve always been so nervous to do start canning on my own; the only experience I have had (up until a few days ago) was watching my grandmother when I was really young wb canning, but unfortunately I wasn’t old enough to retain much at such a young age. I feel a lot more confident watching your videos and just canned salsa “with you” last night. Love the step by step process you provide. Thank you so much! 😊 Oh, I do have a question- Are the berries interchangeable? I have a ton of blackberries in the freezer and am wondering if I can follow the same recipe/instructions for blackberries as well, or would it be different? Thanks again!!

    This was the issue i had the forst time i made jelly. I followed the receipe i looked up online, and there was no mention of pectin at all, so i just cooked it as called for, and lo and behold, 2 weeks later it was still more like a highly sweetened cider 😂😂😂😂

    Mary I have been gifted with 2 jars of the RealFruit Classic pectin which has expired. I know you are talking about without pectin but I wanted to know if I just use more than directions say or don't use because it breaks down into some other thing that is not healthy or what to do with it basically? I know if you have real food vitamins and they expire they just aren't as potent and you need to take for example 3 tablets instead of 2. So I was wondering if pectin works the same way.

    Monk fruit gets it's sweetness from the antioxidants in the fruit, and there are many other benefits. So you might give monk fruit sweeteners a second look.

    Hi Mary, it's been a long time that I made jam. After watching your video I decided to make strawberry since I had just bought a 2# box. I got 3 1/2 pints
    I opened on today & found that there was no strawberry taste. And the jam was very dark. What did I do wrong,? Thank you.

    Mary hello from England!
    Wondering if you could advice me on making reduced sugar crab apple jelly. I also have home made crab apple liquid which I freeze every year. Much appreciated with many thanks anne

      Hi Anne, How lucky are you!! You can use those crab apples to make pectin. Yes, you can also use them to make jelly. And yes, you can reduce the sugar as I show in the strawberry jam video. However, it will have quite a tang to it but it can be delicious!! Love, Mary❤️🤗❤️

    Can I still use this recipe if I have already frozen my strawberries ? I have such a harvest this year it is the only way I can keep up with them without them going bad before I can use them. Thank you sweet Lady !

    Hi Mary, what is the role of the pectin and lemon juice in making jam? I hv made some jam, using lemon juice only and was satisfied with it, but wondered what the lemon juice and pectin actually does.

      The pectin is what helps it to set up and thicken.
