    For the preferment (Biga):
    50 g quinoa flour
    3 g fresh yeast
    10 g sugar
    50 g milk or vegetable milk
    For the first dough:
    Preferment
    5 g fresh yeast
    60 g sugar
    2 L eggs
    60 g milk or vegetable milk
    125 g buckwheat flour
    25gr tapioca starch
    10 g psyllium husk
    50 g butter or margarine
    For the second dough:
    The first dough
    50 g sugar
    2 L eggs
    100 g tapioca starch
    5 g salt
    50 g butter or margarine
    zest of one orange
    zest of one lemon
    half a vanilla pod
    At the time of kneading:
    12 g xanthan gum
    80 g pre-soaked sultanas
    30 g chopped candied orange
    30 g chopped candied citron (pumpkin)
    For the topping:
    70 g icing sugar or icing sugar
