You are right there are so many videos where the bowl of the mixer is absolutely full of flour. so it is nice to see someone just making one recipe and not doubling it or tripling it.
Yes, I think the maximum potential is shown often, but the single batch is not often mentioned. Yes, I will make bigger batches, but I don't always want to make bigger batches. I was happy to find that this mixer can do both wonderfully! Thanks for watching!
I made your focaccia bred recipe for a family reunion. First time making focaccia. It was a hit! I forgot to make it the night before, so it only cold fermented for about an hour. It was fabulous! Thank you!

It is a beast of a mixer! I love it! It is an investment for sure. But, I plan to have it for many years, and be able to pass it down to my kids in the future!

Thank you for sending me to this video, it definitely helps! I now have another issue 😂 I have a kitchen aid, and I love it, but when I’m doing a small batch of anything, I’m having to stop it, scrape it down, and start it every minute until it’s done and it’s irritating. I love the pasta rollers though, so I’m torn as to if I should sell it and all of the attachments for one of these mixers. It looks like less of a hassle 😂
I still have my kitchen aid for the attachments, It is just not in my budget to get all the new attachments for this mixer. So, I just have both. Eventually, I will maybe upgrade. But, I love my pasta! And, the kitchen aid does a lovely job at it! But, for breads, especially fresh milled flour, the Ankarsrum mixer just blows it out of the water. @@GrainsInSmallPlaces haha that’s the same position I’m in - the kitchen aid is mostly used for the pasta attachment in my house. I might just get a manual pasta roller, sell my kitchen aid and attachments in order to fund this mixer. All I have to do is convince my husband we need this other one instead 😂😂😂

Love your videos!! Great detail! My Alexa set a timer when you did that in the video! So funny! I noticed a white bag in your kamut, is that for moisture mitigation? I’m new to wheat berries and wondered if i need to do that since they are in my pantry for long time as I use them.
Lol, thanks! I do use her timer often. But, sometimes she doesn't always listen to me! lol. I have moisture absorbers in them, because I travel to and from all over, and sometimes in super high humidity areas. It is just a precaution, because I am opening them all the time, and always in my bins! lol.
Does it make a difference if I use either winter or spring berries for the hard white? Have you used “white” kamut flour?
Can I make this using sourdough?
I recently purchased this mixer and I love it. I made 30 pounds of masa for tamales (in 3 batches) and it performed beautifully
As long as it is a hard wheat, spring and winter are pretty close, and mostly refer to the time they are planted. I only use fresh milled Kamut flour, I have not tried the kind already milled.
You can use sourdough, and omit the yeast, add 1/2 cup sourdough starter to this, and still do the overnight ferment in the fridge. Then the next day, it may take double time to rise or more. Just watch for it to look puffy and doubled. Hope that helps!

I am three days in to fresh milling 😂. can I need this myself? I don’t have a machine.
Most Fresh Milled Flour recipes require a wetter dough than you may be used to. I won't say it is impossible, but it would be a labor of love. If you have a bread machine you could try using that to knead the dough, it may take 2 kneading cycles. But, if you have to do it by hand, I would recommend you let it sit at the soaking stage for a bit longer, and try using oil on your hands and counter so it doesn't stick as badly. Also, I would recommend a bench scraper to use as well. Let me know how it turns out if you give it a try. Happy Baking!
What size pan are you using?
I used a 9x13 pan, but I only used half the dough. I saved the rest for pizzas later in the week. If you want a thicker Focaccia, you can use the whole batch in a 9x13 pan. Happy Baking!

So 2 questions please. I do not own a mixer so am I able to do this by hand and can I also substitute the Kamut with a different berrie?

You can do this by hand, but it is a very sticky and wet dough, so it may be best to do the first steps and add everything together except the yeast, and let it sit covered for 2 hours (rather than the 15 minutes) Then, add the yeast, and start the kneading process. Knead it with oil on your hands and work surface, rather than flour. You can use all hard wheat if you don't have kamut , or use spelt in the place of kamut if you have that. I hope this helps!
