I do mine with additional 2 dashes of orange bitters, and 2cl of fresh pressed orange juice! My customers love it that way!

The best Whiskey Sour for me was in "Mendeleev" bar in Moscow: these guys use completely different glass, fresh egg whites (also strained to make foam even more condensed) and no ice in the glass. On top (my personal preference) - two dashes of bitters, which soak in egg foam and never reach the drink itself, giving absolutely amazing experience with smell, taste and look.
As of this recipe: I'd not even do this when I'm home alone making it for myself only.

To me the egg whites aren't as optional as they are mandatory in a great (not just good) whiskey sour. The original recipe from many moons ago required egg whites and although times have changed, I don't believe the recipe should have. The only thing I can say is try it with and without egg white and choose which way you prefer.... after all, If your making it for yourself why would you care what is right or wrong when your preference is what matters most. Cheers!

The alcohol kills anything potentially harmful in the egg whites. I absolutely despise eating eggs due to taste, but from experience the best whisky sours are made with egg whites as it gives the drink a silky smooth texture with a fine head of froth that does not interrupt the taste of the drink.

Technically, a Whiskey Sour has no egg white. With egg white it's called a Boston Sour, but I know most people include one in it anyway because you get the nice foam layer on top.

    • @amadan75

Technically the original whiskey sours did have egg whites. Bars started calling whiskey sours, Boston Sours after idiots like you assumed that the right way to make a whiskey sour was with shitty sour mix or lemon juice. A proper whiskey sour has always and will always be made with an egg white.

Sure it will just be a bit more sour, just make sure to add an egg white the procede to do a dry shake and a shake with ice afterwards. You could add some drops of bitters for presentation and to give it an extra kick of flavor.

Add half an ounce or 15ml of egg white before you add ice to the shaker, dry shake (without ice) hard for atleast 20 seconds first to emulsify the egg into the other liquids, then add ice, then shake again, then strain into ice filled glass. It will have a thicker texture and a very nice layer of froth on top. Beautiful.

Starting to doubt the validity of this channel... yes, there should be whites. It adds to the texture of the drink and without it, it is only a whiskey rickey. Yes it is safe to drink because you can drink egg whites fresh and raw and be fine, let alone mixed with alcohol and citrus, both of which have been used as disinfectants and preservatives for centuries. Finally yes, it should be dry shaken because when you do it emulsifies the proteins in the whites which creates a fluffy head and silky texture.
