    If you come across a good sale on the beef, you can make large batches. After cooking, vacuum seal in small bags and stick it in the freezer. Great gifts! (I just can't ever seem to let mine go!)

      You can do it Terry! Small fire that's easy to manage and some meat you'll be eating some in no time. I suggest making extra as it doesn't last long. I was going to do the video using a kettle BBQ but wanted to change it up. Little tip wold be to take the cooking grate off and place the on spreading it out. Then just pop the lid and place the grate on the cooker once it's fired up and ready to go. Thanks so much for checking it out.

    smoked a brisket yesterday turned out tough thinking of making jerkey out of it any thoughts?

      Depends how tough but meat has been smoked and dried for years so I'm sure it would be too bad. I've bought some garbage from stores thta anything would be better so give it a try. Another option would be to toss it in a slow cooker or a stew and it will come out like butter after a few hours.

    Hey Kinger! It is Hot! Interesting choice with the Lump? You know.....kind of unpredictable with quick temp spikes. But......I gotta say.......You had it under control.
    I've been wanting to do some jerky in my WSM.......but even using briquettes has me worried. Nice job with this set up! Turned out Great! 👍

      Don't fear the lump. Easy cheesy my man only rocking a tiny fire keeping temps low = under 200 so no prob on the WSM. I looked at using the Napoleon Apollo that's like the WSM but it's been beat up pretty good and need some parts but it's all the same as the vid to do it on a WSM. Even adding lit briquettes as it cooks would be pretty easy just a small chimney with 10 briquettes once every 45 min give or take. Don't worry about nothing and just give er. Something screws up just call it testing lol. Cheers!

      I've only ever seen it on duck dynasty and never tried it.
