  • On this video, I show you my brisket burger recipe. I ground up an entire prime brisket to make a delicious brisket burger. This was so easy and the meat was extremely fresh and really tasty. As I mentioned in the video, I will never buy ground beef from the store again.

    For burgers you should have ran it through the grinder twice for them to come out more tender when finished.

    On Feb.8, 2023, I priced a brisket at Safeway here in Washington State for $6.99/pound. It was 18.99 pounds and the member price was reduced to $94.76, from a non member price of $132.74. My how times and prices change!
    That grinder has been calling my name for a year now, and I'm buying it April 3, 2023! That 1.5 hp #32 grinder is the one that marries up to the MEAT 50 pound meat mixer for sausage and I'm stoked! I just killed my 1,800 pound beef yesterday, and I'm killing a four hundred pound hog tomorrow! I can't wait for that grinder. It's an American made beast, at a good price!

    I discovered self grinding about 4 months ago , what a fun process. We did 1/3 each of short rib , sirloin and tri tip. Cant wait to try a brisket. congrats well done

    Great 👍 video, I had done something similar about year ago with my leftover big piece of brisket after cutting off the flat for brining corned beef and kind of said the same thing- never buying burger meat again, then I got lazy and started buying again. But here I sit with half a brisket again, and you reassured me- it’s worth it. Mahalo brother

    80/20 is $6/lb right now. I've been kicking around the idea of making my own ground beef. I've got an old 333 hand crank grinder that I built a frame for and attached it to a 3/4hp GE motor that has a Baldor gearbox running at 60rpm. I run the grinder with an automotive v-belt. Nothing slows it down. I've been reading about chuck, brisket, short rib burger mixtures and thinking I'll try a blend. Whole packer brisket is $4/lb. at Sam's now and I can pick up a whole chuck for about the same price. Hopefully I can find meat on sale soon and save even more.

      We've been making Chuck, Brisket and Short Rib blends for many years, and they come out delicious. Far better than plain ground beef. Further, you could even use some Ribeye, add some more fattiness.

    Hey Joe, I ground one prime brisket so far and it made the best grilled burgers I ever ate in a long time. Just bought two more primes at $3.22 a lb and filling the freezer. Meat grinder and vacuum sealer was a wise investment. Thanks for the video.

    I would say you nailed that brisket grind . You chilled the grinder parts , cut off anything you don't want to eat, chilled the meat cubes and got a perfect grind. Nice !! The Hamburgers looked delicious.

    Right after I watched this video I ran out and bought an 8 pound brisket. Cut the fat off and got over six pounds of brisket burger. Then I cut the fat into strips and put then in my air fryer until they crisped up. That turned out to be a huge success and was devoured in no time at all. Next time I will probably trim a little more fat off.

    I have the same grinder, i spend more time cleaning up than i do grinding. Cuts really clean, quiet, and fast! Might have to give these burgers a whirl this weekend.

    Joe,funny I did almost the exact thing as you,prime brisket 14lbs,trimmed,cut in long strips,used a stand alone new grinder(not as fancy as yours)medium grind(ran through twice a/c saw that on ATBQ)froze all as 1/2lb balls 2 to a vacuum bag.when time to cook formed hand made patties and cooked on Weber gas grill.I found the burger cooked that way texture wise grained,then did smash burgers on back side of grill grates theay were much better,have done chuck roast and about to do top round round.If I'm not happy with that i'll try combo's of different cuts,sorry this is so long but i'm trying to duplicate how burgers use to taste in the late 50's early 60's

    Loved the video. I’ve just started grinding my own briskets because of you. I have a LEM 32 and just did four untrimmed packer briskets that were 51 lbs at $1.67/lb. I cut off about 10 lbs of fat for deer meet in the winter.

      @@BornFreeFilms with a smaller grinder, like a KitchenAid attachment, strips always work best. But I imagine with the large size of his grinder, chunks would actually be beneficial because the hole is larger and you can grind more at once.

    One thing you might consider, which I've seen on Henry's How-tos CZcams channel (shout out to Henry) is run the meat through twice in order to evenly distribute the fat throughout the grind.

      @@SmokinJoesPitBBQ I watched another video that ground the meat with two different sized grinding plates. I just bought an STX Turboforce that came with 3 different sized plates-4mm, 5mm & 8mm. The other video did not mention recommended sizes, though. Maybe others can chime in on this.

      @@SmokinJoesPitBBQ try starting with a 7-10mm for the first grind (depending on what came with your grinder), then a 4-4.5mm for the second grind. Some like their's a bit more "rough" ground once with a large-hole grind plate, resulting in more texture, but you get better fat blending grinding twice.

    Watching videos for my first brisket grind. I buy a 2 chuck package at sams and grind them up, but my Kroger meat guy just called me and told me brisket 1.99 lb. Can't pass that deal up, bought 5. Smoked one, came out great. Now for the grind. Thanks for the tips!

    Hint: if you season the meat after you cut it up in small chunks and let it sit over night, you then grind it up, you will get fantastic results

    I like your style. If I'm firing up the smoker for a couple briskets, I always grab an extra, smaller prime brisket to grind for sausage. A lot of people think that sausage is just made from whatever is left over from cutting good cuts of meat. I think that the better the ingredients that go into the sausage, the better the final product.

    I just cooked some burgers I made from tge trimmings of a Prime brisket I cooked a few weeks ago. I'm with you, I just got Choice Chuck on Sale for $3.79/lb that i ground and vacuum sealed in 1lb packs. After eating those burgers I think I'll be heading to Costco for a full Prime packer ($3.99/lb) next time I run low on ground meat

    Hi Joe..Love the channel. I've learned allot from you. I have a Cabelas 1.5 hp grinder. It is a huge benefit to have a grinder. I use it more than I ever thought I would. I never buy store hamburger anymore always grind my own chuck or brisket. Super better quality and taste. I find the extra cost is worth it for the better quality. Also been making home made sausage now with it. The possibilities are endless..Enjoy the new machine. I look forward to more videos using the grinder.

    Hombre, I've had burgers twice this week and now I'm wanting another. I'm with you though, never buy hamburger meat again. I've been grinding brisket for about a year now much cheaper than paying grocery store prices. If you haven't smoked cheese in the 640 yet, put it on your list, smoked sharp cheddar will kick that burger up a notch or two. BTW, being a native New Mexican (Mesquite) living in Houston since 92', I appreciated your smoked queso video. Keep those videos coming, each one is a winner.

    Great video: Researching meat grinders, because recently i have been doing the Lion Diet for weight loss and was getting stomach pain the last few weeks buying ground beef like something changed with the ground beef i was buying from sams club, noticed the tubes have a label "contains bio-engineered ingredients" and i freaked out curious of what they are adding to ground beef now to cut corners or such. So looking forward to trying my first ground beef brisket burger. Something i wanted to add, i use vacuum sealer a lot because i cook my steaks in sous vide, for burgers i put 1lb ground beef in the vacuum sealer, seal it. Then i mash the meat flat so its easier to stack in the freezer, but when i go to cook it, i just toss it on the grill as a large square and after about a minute on the grill i use the spachula to separate the large patty into 4 square patties and finish cooking them. Just found it easier to store the meat and cook it this way. Sometimes i sous vide the ground beef with my steaks im cooking, then toss it on the grill for a few minutes to finish it off since its already cooked to medium rare from sous vide.

    its more 60/40 if you use the whole thing. which i like . a good greasy burger. also good for hot links. great job. why ilove your videos you do the stuff i used to do in the 70s and 80s. stuff i grew up doing. my grandpa threw nothing away it all went into sausage lol

    This was a very good video and informational. Im actually thinking about doing the same instead of buying walmart beef. I will be get quality results doing it myself and potentially saving myself some change on the side after the initial investment. Thank you sir!

    Great new addition to the home processing plant. Are you sure this is what your butcher meant when he said you should try grinder? The burgers looked amazing and the meat did look clean like you mentioned. Next time maybe save the prime brisket for the pit and use a select grade or choice? It would be interesting to see if you prefer one over another. Knowing the cuts that went into the burger is priceless.

    Suggestion: try square patties. Weigh meat. Stuff into sandwich bag. Smash to flatten into square patty & store in bag.

    Kroger here has brisket on sale $1.99 a pound. Ground beef is $4-$5 I have been doing this for a while. Its better quality ground at half the price. I hunt and always process my own meat so already have a good meat grinder.

    I made my press by converting a cast iron tortilla press and making rings.
    used cling wrap and put it in the ring.
    Added meat folded over wrap and pressed.
    fold uo remaining cling wrap and press again.
    Its ready to freeze or use.
    Used a #22 grinder with a 1/4 or 6.5mm grinding plate.
    looks like you used a 1/8th plate.

    I bought a 42 from bass pro shop. The cabella unit. I think it's made from same mold. Your parts looked same as the cabella unit.

    Run pieces of white bread at the end to push the last bit of meat through the die. When bread comes out, stop grinding.

    Hello great video since u made this video have made more ground beef thru a 2nd grind how did it turn out. Also would you use a coarse grind or a fine grind

      Hello Jerard, I have and I would definitely grind it twice through the 10mm die or once through the 10mm and then the 4.5mm. The 10mm grind was good but it was too course.👍

    Just got a big commercial kitchen Aid mixer and I guess I can get a meat grinder for it. Gonna try this but add some hatch chilies to the mix... Question or request, my meat game is down thanks partly thanks to you (best carnitas ever)... Could you make a video on veggies? I struggle with them on my grills, pellet, off set and gasser.

    Hey Joe, love the channel mate. Why freeze the burgers before vac sealing them? I kind of get it if it has cheese on the burger, but you said you have three trays in the freezer so I'm guessing there is another reason. Cheers.

      Hello Kev, the 3 trays of burgers were raw patties. The reason is if you vacuum sealed them raw, they get all smashed up.

    That looked good (the burger not the Lone Star). You could use that grinder as a wood chipper.
