Also it depends on what you preheat the oven to after searing. You have to factor in the things I previously mentioned + the internal oven temp. Typically, it should range from 200- 350 degrees, favoring the former metric

Try perfect crust on the outside, and perfect medium rare inside. Only thing is with that hard of a sear, I wouldn’t use pepper in the beginning as it will burn and not taste great. Salt is really all you need.

It does, the warm butter helps extract all the flavor from the rosemary and garlic then u baste it. Im stating the obvious, stupid question.
