Half the content is for the new home cook but sometimes they just want to show off some things for an advanced cook , not to mention even if you don't end up cooking something like them they still teach you good tips , I know I've done some things in the kitchen that I picked up from them without thinking .

If you can afford prosciutto, you want it as thin as possible. They will usually have the blades on the slicers on a more general "thin" setting for other meats but prosciutto you want thin. Source: Italian grandmother owns a deli

You should officially give this series a name. "Reverse Engineering" should be part of the title (not just "recreate") because that's memorable.
The final result reminds me of college courses where the highest grade in the class was an 80 meanwhile the average for the class was like a 40. Chris did an amazing job which I believe many could not replicate as easily.

I mean, he's an experienced chef - he more or less knows how to make beef wellington. He kinda acts and pretends he doesn't know what it is in the beginning for effect.

I have cooked Gordon’s recipe for the last 3 Christmas’ and my family loves it. One key that he missed here is putting the mushrooms in a food processor and turning them into an almost paste then slowly cooking all the water out of them. That’s why his pastry split. Also, Gordon does prosciutto, mushrooms and beef in the first rolling then chills it. Then lays out his pastry and does the final roll. He uses clear wrap for both rolls which helps get all the air out and a tight uniform shape.

A chef's pallete is their life. In the Netflix documentary "chef's table" you actually get to see how incredibly sensitive their pallete is in an episode which is about a Chicago based Michelin starred restaurant where the head chef had lost his ability to taste. It's frankly awe-inspiring

Anytime I’ve seen Gordon do a Wellington he coats the filet with English mustard after the sear. It doesn’t seem as though either had that. It’s also something very unique and really a great taste that helps the fish.
