►Ingredients for the McChicken Sandwich
►Chicken
1 kg or 2.2lbs chicken mince (1 breast 2 thighs) (7 - 8 patties)
2 tsp cayenne pepper
2 tsp white pepper
1.5 tsp celery powder
2 tsp garlic
1.5 tsp onion
1.5 tsp sugar
1 tbsp thyme powder
2 tsp black pepper
1.5 tsp msg
1 tbsp salt
►For the Mayonnaise
2 large egg yolks
2 tsp mustard
250ml (1 cup) sunflower or vegetable oil
2 garlic cloves
1 - 2 tbsp lemon juice (depends on your liking)
1 tsp white pepper
1 tsp black pepper
1 tsp salt or to taste
►Dredge
1 cup 50% fine panko breadcrumbs
1 tsp salt
1/2 tsp black pepper
2 large eggs
Some water
1/2 tsp salt
1/2 tsp black pepper
1 cup plain flour
1 tsp salt
1/2 tsp black pepper
1 tsp white pepper
2 tsp smoked paprika
2 tsp garlic
Oil for frying
►Lettuce
1/2 iceberg lettuce
1 - 2 pickled red chili
2 tsp lemon zest
1/2 tsp mustard seeds
1 tbsp lemon juice
1 tbsp dill oil
►Fries
1 tsp sweet paprika
1 tsp mustard
1 tsp white pepper
1 tsp garlic
2 tsp red chili flakes
1 tsp msg
2 tsp cajun spice
1 tsp sugar
1 tbsp korean red pepper flakes
2 tsp oregano powder
2 tsp salt
Cooked fries, as required.
Season to taste
