a quick top for using garlic and ginger Casey is to add the garlic and ginger when the oil is still cold and leave the flame on low to really extract the aromas and infuse the oil. you don't need to have hot oil to extract the aromas. simply breaking open the garlic and ginger releases their odors.
you do really well with cooking film. less swearing then the others, more organized. prep is a big key to cooking shows. cuts down on time spent doing tasks. I really enjoyed this. Thanks going to try it.

+Jay Lee For a fried rice dish, I agree with Casey that you don't need pieces of ginger in there, and since he's adding both white and green onions, you don't need garlic pieces in there either, so sweating them in oil first to add their flavors but not fighting with onions was the way to go.
ECBanker in his instance he used pretty big pieces of ginger and garlic, it would definately be too much for just a small serving like the one he made, but my family usually just chops up and adds in the ingredients instead. Not necessarily the ginger, but the garlic for sure
to cut the onions fast, make cat paws. AKA curl the fingers you are holding the onions with so you never cut yourself. Without the fear, you can cut much faster.
After you cook the onions, it's actually better to fry the kimchi a bit as well. It gives a stronger (and much better) taste of the cooked kimchi. THEN you add the spam and stir. Then Rice then egg.
I use spam in my fried rice most of the time myself. I suggest crisping it up with the white onion to bring out the flavor more and make it crispy for texture. Other than that great job, good idea using oyster sauce. I'm gonna use it next time.
that was tasty! I made it for dinner tonight but without the spam bc its vegetarian night and using hoisin sauce for lack of oyster sauce. still so very tasty!

Metal utensils/spatulas can scrape the nonstick coating on "nonstick" pots and pans. Use wooden or silicone ones.
