Making zhá guànchang 炸灌腸 in Beijing

    Here's a lady preparing zhá guànchang 炸灌腸, wheat-flour pancakes, in one of the shops along the touristy district of Qianmen in Beijing, China. Located south of Tiananmen Square, Qianmen was redone in recent decade in order to host a selection of delicacies from Beijing and around China.
    I don't know the recipe but these little "pancakes" are boiled in oil and then served with a garlic butter sauce. Not calorie friendly, but better eaten when hot as they can get very hard once cold.
