COOKING PANJIRI WITH MY INDIAN MOTHER IN LAW | Panjiri Recipe

We are finally back with our cooking videos! We are so sorry on the delay on this one - It has definitely been a long time since we did one because of lockdowns and restrictions, but now that we are all allowed to see eachother indoors again, get ready for more family vlogs coming up! Recipe below:
THE RECIPE:
Ingredients:
Small bowl of cashews
Small bowl of almonds
Small bowl of sesame seeds
Small bowl of poppy seeds
Small bowl of Melon seeds
1/2 teaspoon of black pepper
500g of Khoya
500g of Ghee
500g of Atta flour/wheatmeal flour
500g of raw sugar
You can also add in other ingredients/nuts if you would like but this is just what we used!
Directions:
Firstly, roast the cashews, almonds, sesame seeds, poppy seeds, and melon seeds together in a frying pan for a few minutes until they start to smell roasted and turn a light brown colour, then once roasted remove from pan, and grind altogether to a powder and set aside to use later.
Next, add in the ghee and atta flour together over a medium heat and stir well continuously to make sure it does not burn to the bottom of the pan. Keep stirring for around 15-20 minutes (although this timing does depend on the oven type you have), or until the mixture starts to go dry and have a red/brown tint to the flour and you can see the little bit of ghee not absorbed bubbling on the sides. Once this happens, add in the sugar, and stir this well. Then, break up the khoya into smaller pieces and add this into the mixture also, and add in the black pepper. Turn off the heat once this is in but keep the pan over the burner and continue to mash/stir the mixture well to ensure all the khoya is broken up into the mixture and you cannot see any more white pieces. Once this is done, let this cool in the pan before rolling into balls (however big or small you would like) and serving. You can also skip this step and leave the mixture loose if you would prefer, we just find the balls/ladoos easier to eat! And enjoy!
