MAKING ALOO PYAZ PAKODA WITH MY INDIAN MOTHER IN LAW | Onion Besan Pakoda Recipe

RECIPE:
Amounts may vary depending on how much you are making - this was enough to feed around 4 people!
Ingredients:
3x potatoes
2x onions
1/2 of cauliflower
Salt
Pepper
Garam Masala
Turmeric
Amchur Powder
Red Chilli powder
Store purchased pakora masala
Plain unsweetened natural yoghurt
Chickpea flower (besan)
water
Oil (enough to fill have a fry pan to deep fry)
Directions:
Firstly, before starting pour in large amount of oil, enough to fully cover the vegetables to deep fry them so that the oil is hot when starting to fry. Next, chop and wash all vegetables into desired size of quantity and add them into a large bowl together. Next, add in 2 tablespoons of yoghurt, 2 teaspoons of salt, half a teaspoon of garam masala, half a teaspoon of tumeric, 1 teaspoon of amchur powder, and half a teaspoon of red chilli powder (or add more if you would like it to have some spice this was just to leave mild as our children were also eating). Then add in 2-3 tablespoons of the pakora masala also and mix in together.
Next, add in around 1 cup of the besan/chickpea flower and mix with your hands along with small amounts of water and try to form a thick paste on the outside of the vegetables to make sure they are coated for frying. Add in more water/chickpea flower as needed to create this mixture (see video for desired thickness). After this is done check oil is hot enough by adding in a small amount of mixture to see if it sizzles (you don't want it to turn a dark colour too quickly otherwise the vegetables will not cook accordingly) so keep heat to a medium. Fry for a few minutes and remove when it reaches a nice golden colour to ensure it has a nice crunch to it. After this, mix in some of the pakora masala again for some extra flavour and serve with your favourite side sauce (chutney, yoghurt, tomato sauce, and sweet chilli are our personal favs!)

I just found out how to stop crying when cutting an onion. Place a wet paper towel next to the onion on the chopping board. As you chop the onion, the chemical that the onion releases will be absorbed by the wet towel first before it reaches your tear ducts.

I am sorry to write guys but Mummy ji is become New Zealander now. If you are making Pakoda then the Potato should be cut in round shape not like finger chips, second put all the Massala in Besan only when you put some water and make it ready for the veggies and deep in Besan Masala and then put cutting veggies in Besan Masala then drop in medium hot oil to fry them properly
