This is an easy chicken noodle soup. You don’t need hours to simmer the chicken, because, with this hot water method, you can get a 3-hour simmering result within just 5 minutes; The soup comes out rich creamy, and hearty. You will be surprised by how flavorful it is. This recipe is also budget-friendly and it is enough to feed a whole family.
INGREDIENTS
2 lb of skin-on bone-in chicken quarters
1 tbsp of cooking oil (Amazon Link - geni.us/vegetable-oil)
2 inches of ginger, sliced thinly
4 cloves of garlic, peeled and cut in half
2 scallions, tie into a knot
2 shallots, quartered
1 piece of Jinhua ham (optional, can be replaced by a thick cut of bacon)
2 liters of water
5 Shiitake mushrooms
6 oz of baby Bok choy
4-5 servings of noodles (400-500 grams of fresh noodles or 250-300 grams of dried noodles)
1 tbsp of soy sauce (Amazon Link - geni.us/light-soy-sauce)
1 tbsp of oyster sauce (Amazon Link - geni.us/premium-oyster-sauce)
1/2 tbsp of fish sauce (Amazon Link - geni.us/fish-sauce)
1 tbsp of sesame oil (Amazon Link - geni.us/roasted-sesame-oil)
2.5 tsps. of salt or to taste
Diced scallion as garnish
Lao gan ma chili flake for spicy kick (optional) (Amazon Link - geni.us/lao-gan-ma-chili)
INSTRUCTIONS
Preheat the clay pot (or other heavy-duty stockpots) until nice and hot. Add a little bit of cooking oil to sear the chicken and Jinhua ham (optional) until golden brown. This will take a few minutes on each side.
When you flip the chicken to fry the other side, add the ginger, garlic, shallot, scallions; put them in between the chicken pieces so they can be fragrant. A large amount of ginger will make the soup very comfortable.
When the chicken is golden brown, pour in 2 liters of boiling hot water. When the boiling water touches the hot clay pot, it will bubble violently which shakes the meat and accelerates the protein dissolution. This will instantly make your broth rich and flavorful.
Even though the broth is already done but you still have to simmer this on low for about 15 minutes just so the chicken meat can be nice and tender.
Meanwhile, you can slice the mushrooms and cut some bok choy.
15 minutes later, remove the chicken from the broth and let it cool. Discard the aromatics and skim the chicken fat from the broth.
Add the mushroom slices and 4-5 servings of noodles to the broth and cook for 4-10 minutes depending on the type and thickness of your noodles. You can also cook the noodles in a separate pot and then transfer them into the broth, so it doesn’t thicken your soup. I prefer my noodle soup to be a little bit thick and silky. That’s why I cook it in the broth directly.
Meanwhile, Take the chicken meat off the bone and shred it into bite-size pieces. Season the chicken meat with soy sauce, fish sauce, oyster sauce, garlic powder, and sesame oil.
When the noodles are almost done, add the baby bok choy and salt to taste. To make a serving, add noodles and broth along with the chicken meat to the bowl, top with some Lao Gan Ma chili flake for an extra spicy kick. Enjoy!

Hi Mandy! I’m a sophomore in university and I just want to say since I found your channel, I have been cooking more and more delicious things and I am so grateful that I found your channel and everything that I have made has tasted amazing! It’s so hard for me to eat at my place since I get so bored of the same stuff and you have taught me to to become a better cook! So I just want to say thank you! ❤️

U
Bryan from Canada, didn't know that I've been doing this all these years, i add different spices but thats all preference. I wait each week to watch your show and never disappoint. Thankyou Mandy!
Hi, Mandy! I absolutely appreciate you! A year ago I decided to expand my food horizons and a recipe from your youtube was the first noodle I ever tried to make. It turned out amazing and I've been making your foods ever since. You make me feel like a good cook and I am proud of the food I make! It's an incredible feeling to bring food to a table knowing you put your heart into it and actually reveling the feeling of a well made recipe and good food! Thank you for everything you have taught me during this year.
What a perfect thing for this dreary early spring! I absolutely love the stock technique, I do believe I have encountered a game-changer. I want to show this recipe to my mother so she can try something different if Chinese but also so convenient to make.
Hi Mandy I always love to watch your cooking, giving tips and instructions, you are a great source of inspiration, and you share secrets unlike most Chinese who don't, thank you for your sharing your kindness counts a lot
Wonderful recipe, will try it. Thank you again.
Thank you Mandy. Clear explanation and really tasty. Thank you 🙏
Looks delicious! I will be making this recipe! Thank you for sharing this wonderful recipe!💐
Thank you so much for the recipe. I followed your instructions to a T and it turned out fantastic!! You are a great teacher. I’m retroactively watching all your videos now. 😃
Can't wait to try this recipe. It looks delicious
Thanks, Mandy, this Smart Recipe is Awesome! Can't wait to give it a try!
This dish looks like a huge bowl of comfort. Yum!
I've revisited this recipe and its techniques so many times, ever since this video came out. I just made it again, but added thinly sliced sticks of burdock root to the broth at the same time as the water, instead of noodles. The result is so fresh and comforting on this cold dreary day where I am. Thank you again for this wonderful recipe!
Love this. Made it and even my 8 year old couldn't get enough! All the way from South Africa!!! Love Chinese cooking 😊
Mandy I have your clay pot & it is so versatile & so perfect to cook with. I was relatively unfamiliar with the intricacy of clay pot cooking until watching your brilliant videos & while not an expert at all I feel I can cook adequately in this great pot. Thank you for your excellent & informative videos, you are such a patient & terrific teacher & it is a pleasure to watch you cook.
As a Filipino in the UK, I'd always sautee the chicken with fish sauce until golden. I so this as a base for ramen or even rice porridge/congee. It adds a different layer of umami in my opinion. Try it..😊👍
Congee with chicken and a mix of Golden Mountain and fish sauces sounds like a great dinner tonight. I think I have some canned bamboo shoots and fresh bok choy to chow and add in... 🤤
@@Bear-cm1vl ooh that does sound yum!👍👍👍
The way that “hi everyonnnnnnnne” rings like a bell at the start of every video just makes me love Mandy.
This is such a terrific soup base hack! I usually don't make a lot of stock for soups because it does take all day. But with this process... I can do it all the time. Thank you for posting this delicious looking recipe and broth hack. 😊
I definitely would like to try this Mandy! Thank you❣️

really really nice easy dish thanks so much once again. I will be making this.
Just made this for my family. Excluded the pork but was still so yummy! Thank you for sharing, Mandy!
I love your recipes.. I tried many of them for two years now since I subscribed to your channel. It's my favourite one for chinese food
This turned out great when I made it! Instead of mushrooms I used umami powder that is sold at Trader Joe’s, (my husband dislikes the texture of mushrooms) and it definitely boosted the flavor! I also used saved-up bacon grease to cook the chicken in, and that totally added a depth of flavor. Great recipe and cooking tips, thank you!
That's a great way to make it I'm going to have to make this tonight great job Mandy ❣️
Love your videos. Love your manner of speech🇨🇦
Thank you for teaching us this tasty meal. I look forward to watching more of your meals.
Hope you enjoy
I buy bulk leg quarters and remove the back for broth. I usually boil for hours so I like his idea. I already have learned so much from Mandy.
Hey Mandy! This looks yummy. Thank you for all of your wonderful recipes! I do make a homemade chicken noodle soup, with homemade noodles. Of course I do not use the same herbs as you. So this will be a fun twist to a different chicken noodle soup! Thanks again!
That looks delish. Will definitely give it a try. Thanks

Thanks. I tried it and my guest loved it and asked for the recipe. One guest has already made it.
I've tried it right now. Wow, i was surprised that such short time of cooking/browning makes such a good broth. My kids loved it!
Fantastic video, thank you. 🙏
Mandy, I love love love this. Especially since I'm feeling sick right now.
Yummmm I shouldn’t be watching at 2am 🙉 I’m looking through my pantry and freezer to see if I have ingredients on hand for later in the day hahahah I love soups and noodles 🍜

I don't really eat breakfast, but I love to have soup as my first meal of the day, and this one looks absolutely delicious!
Thank you for this!
Excellent Mandy .👌🏼🇮🇪
Going to have to try this method for chicken soup.
Wow! this chicken noodles soup looks delicious and tasty! thank you for sharing your recipe.
Made it! Absolutely fantastic and just wanted to say thank you. I use a 5L cast iron pot rather than a clay but it works perfectly. Thank you :)
It's a pleasure to watch! It looks like a perfect noodle soup! 😊
I can't wait to try this!
U Help me a lot cooking my Favorit Cuisine. Thanks!
Thank you so much for your recipe 👍
Love your videos and innovative ways to prepare your meals. Will try this next time I make soup, as early as today! Won't be cooking the noodles in the soup though. I always prefer to prepare them separately so my soup doesn't get cloudy from the starch.
If I ever have family that I cook for, I will be serving them the whole bones traditional style though🙂
Hello Mandy that was a great recipe it look so good and fresh.i will be making this chicken noodle soup is 1 of my favorite...thank you so much for sharing take care and bless you...🙏😊
Your recipes are amazing my fiancé and his parents love them! They ask me to make your wonton noodle soup when its cold out
I made this last night. OMG so delicious! Tastes exactly like something you'd get in a Chinese restaurant. I skipped the ham, and it was still terrific. One thing I will add is that I decided to simmer the chicken a bit longer, since it wasn't quite tender, fall off the bone ready after 15 minutes.
u never fail to amaze me, pls keep on creating videos like this ❤️❤️❤️❤️
Looks yummy. Will try for sure.
I tried this recipe and it was amazing and my family loved it very much❤thank you for the recipe 💐💐💐❤️❤️❤️
That looks so yummy. I could eat that for breakfast for sure.
My kind of breakfast food!!!!
Ham makes everything taste better. I used to make soup in a pressure cooker to speed up time. I also brown the meat for a richer more complex flavor. I will try this. Thanks.
Thankyou for recipe
Ever since I started cooking more and more, I find myself more and more eating "dinner" food for breakfast. The past couple of mornings it has been homemade indian food, but I could definitely do some Souped Up Recipes for breakfast too!
It’s 3am but I need this soup now. I’m definitely going to make it asap.
Great show thank you. Yes very yummy 😋
I can't get enough of soup or stews anytime of year it doesn't matter always good
This looks so delicious! I really want to try it :)
This looks amazing! Thanks for sharing (:
Great soup for a Low Carb Diet, without the noodles. Love it also for breakfast!

mnam, mniam, kocham Twoje przepisy:)
Ah delicious , perfect for cold march morning and then take some to work☺️🥘
One time I made pho broth and it took me hours but was so delicious. As much as I would like to make it again . I think I would want to try yours first lol . Looks so amazing.
It will be very cold here for the next week. I made your special soup and it was soooooo delicious. You are a star Mandy!
This looks so good! Also you look so much better with your bangs combed to the side , it opens your face and makes your eyes look bigger!
Looks amazing! Trying this now 👀 🍜
Looks great and very easy! I will have to give this one a try soon. A fatty piece of country ham would be great for this! Broadbent Hams sells this online and has some of the best country ham I have had. The pieces are very fatty, and the flavor is very rich from being aged. I found them when I was living in Europe and they were the only ones I could find who would ship to me. Now, I stop at their store when traveling to visit family since it is about halfway on an 8 hour trip.
The noodle soup looks tasty
I'de simmer just the bones and skin for bonus broth. You are awesome! I've never seen this technique.
That looks so delicious.
You're so sweet. Love your videos!
