    To be fair, cooking is an art that covers a myraid of recipes from every part of the world. Even someone who has mastered their craft, like Gordon, still don't know everything about cooking. The fact that Gordon was humble about it shows that he understands the old adage: "the more you know, the more you learn how much you don't know."

      @@akshay4745 Cooking a dish at home for your family is completely different than cooking a dish for someone who’s an expert in a cuisine and has been cooking it their whole life.
      Once again, those people signed up for the show. I don’t think you realize that in one of Ramsay’s restaurants, that’s how the chefs are treated. They’re expected to be the best of the best which is why the restaurants are considered the best of the best. Not every person has that quality, and Ramsay isn’t afraid to let them know.
      “Pathetic can’t cook drama queen”. Right… that explains why he trained under the best chefs. If he couldn’t cook, they wouldn’t have even taken him into consideration. If he couldn’t cook, how come he won 2 Michelin stars at a restaurant in less than 3 years after joining them? If he couldn’t cook, he wouldn’t have TV shows offering spots at his prestigious restaurants as a reward…

    To everyone saying "I respect Gordon more after seeing this":
    1) The chef didn't scream in his face, even though he hated the dish. Gordon does not give this courtesy to others.

    Here's what I learned from reading David Thompson's book. Western food is based on portraying the flavor of the main ingredient, typically by cutting down the amount of ingredients or avoiding any overpowering flavoring. Thai food on the other hand uses a lot of very intense ingredients to achieve a delicate balance of flavors that define what that dish is supposed to taste like. The chef uses the words "sweet, sour and salty", so the balance of the flavoring agents (tamarind, fish sauce, sugar) is off, which means it's not pad thai. A western cook might think it's pad thai because the main ingredients (noodles, shrimp, bean sprouts etc) are there, but that's not what defines the dish.

Assuming that OP's comments are accurate, it's probably just a reflection of the degree of importance that each culture places on ingredients vs flavour. Eg: you can change the noodles, the type of sugar, and use different pastes, it will be Pad Thai so long as you achieve a similar balance of flavour and texture. On the other hand, traditional Western approach to cooking are more strict about the ingredients -- they'd care about whether there's egg or peanuts, or the type of noodles used.

      I think the sugar was the kicker. I've made it a few times with white sugar like he did and it just doesn't taste right. Palm sugar is best and brown sugar works okay. Plus you need a metric ass load of lime compared to how it is served in the west, otherwise it doesn't taste like what you get in Thailand.
