There could be 3 reasons that could apply. 1) it could be to show his power and intimidate people 2)to establish control over hueco mundo 3) to humiliate the "queen of hueco mundo" because Quincys hate hollows. edit: he could have been trying to break her will so that she works for him, similar to what he did with the other arrancars.
I'm genuinely so happy to see the bleach anime getting the love it deserves. For me it has always been the best out of the big 3 probably cuz I most relate with ichigo as a teenager.
