Mexican fruit cups are sliced tropical fruits (typically mango and pineapple) seasoned with chilli powder (tajin usually) and dowsed in chamoy. So you end up with sweet, spicy, sour, tangy, refreshing, even a little savory from the chamoy all in one bite its in your own words ‘damn near delectable’

On fair burgers, i worked at a BBQ and grill food truck type stand at a state fair. It stayed busy and the Donut Burger (the Luther from boondocks) was the top seller.
I visited my Sister and her family in Wisconsin last Summer and went to the state fair. I got fried Cheese Curds at the fair and they were so good. A+++
I'm surprised that caramel apples aren't on this list.

We get stands that sell a "Purple Cow." This is basically a grape soda float with vanilla ice cream. Sometimes sold with grape syrup and Berries inside. It's consistency is between a float and a milkshake. It smacks.

Chicken on a stick is one of the best fair foods around and they're pretty much just some bomb ass tenders on a stick

We went to a state festival/fair where their whole gimmick was "World's largest free fish fry." And it was so good!

Here in Florida they always have fried fish and chips, crab, oysters, clams etc... at the fairs. Which is fine till you get to one that doesn't cool properly and their seafood as gone bad and the stinch stays in your nose the rest of the night.
Down here, at our county fair, they have chocolate eclair funnel cake.

One carnival food I don't see a lot of people talk about is ribbon fries. Imagine an obscenely long potato chip that you deep fry like a funnel cake and you serve it on a plate. I like to put nacho cheese or ketchup on it. More people need to do it.
I personally would've put cotton candy higher up, because it's one of my favorites, but I see what you're saying. While it is expanded sugar, it's not like people need all that much sugar anyway. But if I were to be fair, I would at least put it in a C tier. No joke intended.

A Mexican fruit cup has to have either mango, watermelon ,coconut, something called jicama or even cucumber but they are usually topped with tajin and chamoy and if you're not wanting any of that you can just have it all plain

I respect your list for the most part…but you extremely hoed cotton candy my guy. It’s one of the 4 pillars in carnival foods. Corn Dogs, Turkey Legs, Cotton Candy, Funnel Cakes. It should have at least been in B or A tier, for most kids it’s their first fair memory.
In terms of tacos, the Walking Taco: Fritos or Doritos (in the bag) filed with meat, cheese, etc. Walking around spend time eating from the bag A to S tier

I live in a place where you can buy a Mexican fruit cup on pretty much every corner... can get them with any array of pineapple cucumber watermelon jicama usually topped with Tajin and or chamoy.
The cheese you were trying to say is pronounced Ko TEE ha.... and those little powdered sugar dusted yummy things are pronounced ben YAYs.
Funnel Cake is my all time favorite Carnival food, S Tier for me, Corn Dogs are A tier to me. Churros are A tier too. Beignets (Ben-yays) are delicious, A tier!

My Boy Scout Troop in Ohio we would raise money during a 4 day fourth of July fair by selling fries and snow cones. In 4 days we'd go through 1 ton of potatoes. We stack fries high and have Cajun seasoning and such. Great value. Great fundraiser.

I gave up on corn dogs at the fair. The vendor here the past several years the batter ain't done in the center. I can't get with uncooked corn batter
Also I fell in love last year with some amazing soft serve ice cream. We were flat ass broke for the rest of the fair week and I'm still dreaming of it old man can put it down. He was like 70 but shit was amazing
