It's not just the temperature that makes it dangerous, it's also the fact that it's sticky. You touch a stove while it's hot, you pull your hand away. If that stuff gets on you while it's liquid, there's no way to get it off your skin quickly.

My family makes a ton of caramel popcorn for the holiday season and we call the liquid sugar/cream (aka caramel) mixture edible napalm. Not only will it burn you, even putting it under running water won't instantly stop the burn. You can't get away from it.
There was a video on how to cook that debunking troom troom life hacks and one of them was like “get melted caramel, put it on a screwdriver, put it in a box (three cardboard and one plastic? Not glass but something clear) and it’ll make a pretty looking decoration 😜”
Edit: I went back and watched the video and the way they actually did it was pouring melted caramel onto a beater that was spinning and they used it as a decoration on the top of a cake, when another person tried it they used a box and had good quality (heat resistant) plastic wrap to protect themselves and the caramel still burned through the plastic wrap
And it adheres to first layer of skin as it burns so trying to remove it only removes that too... in all I cringe when she touches the stuff but the results are so amazing 👏
I was going to say something then realized it was stupid so instead I'll say, if you ever get hot oil on your skin running it under hot water is the best way to get it off or at least that's what my mom says

Yeah running water over it creates another problem where it will fuse to the skin. Brushing/wiping off as much of it as possible is the best bet before water (some people use flour too since it can absorb some of the liquid and doesn't shock your skin by being too cold). Sugar and oil burns are nasty since they are easily way past boiling point (100 degrees Celsius)

I feel your danger because although I don’t work with candy I do a lot of 3d printing and my 3d printer reaches upwards 220 degrees Celsius and is enclosed so more often than not the filament stays extremely hot and I have burnt myself a few times taking my prints off the platform.
When I was 16 I was making peanut brittle and got melted sugar on my finger. 50 years later I can still see the scar.

I had an accident with molten sugar and spices while glazing a ham at an old job, I froze up for a few seconds but then swiped it off and flung it, along with my skin, across the room. Not the most sanitary but at least It didn't burn through to the muscle

Hot sugar is very dangerous. My sisters gastronomic teacher lost one of her fingers like this. She was making caramel and some of it landed on part of a finger. In the less than a second it took for her to rinse it, the water also washed away her skin and muscle, leaving only bone.

I hate to be that guy, but "boiling" doesn't always mean hot. Just evaporating. For example, if you stick your hand in a boiling pot of liquid nitrogen, you'd likely get frostbite.

Caramel burns are no joke. It almost instantly cools onto your skin and when you try to get it off, it takes a lot of skin with it.
I used to put candy in the fire and pull it out real quick to eat it.wasn't the best idea.

There's a reason why most people weren't allowed near the melted chocolate at the chocolate factory I used to work at. Some people just don't understand how hot that shit is until one of the multi-gallon vats is somehow knocked over and your suddenly covered in molten chocolate.

I worked at a large scale bakery I know how hot it is. I never got burned really bad from it, But when I was a new guy I did grab the heating rod underneath😂 Instantly regretted that and never did it again.

Temperature through gloves can be deceiving sometimes too. It’ll feel ok for a moment and not notice you’re starting to burn.

When I was in cooking class in high school I was handling caramel straight off the stove, only just no longer boiling. I was careful not to spoon it over my other hand but another student was spooning caramel from the same pot and accidentally draped a giant slug of caramel over my bare fingers. I dropped the spoon in pain, turned around and started running my hand under the sink which cooled the caramel off only enough for it to start hardening on my hand, but not enough to sooth the burn. I was burned pretty badly. I could feel it. I had no choice but to scrub until the still hot shell of candy completely dissolved off my skin, or risk peeling the skin off with it. I could not go without cooling it in water for more than a minute for the entire day and into the night. The red blotchy mark it left when the dead skin had peeled off and healed over lasted an entire year. Hot sugar is no joke.
My mom always says that caramel is the worst type of "house" burn.

makes me wonder why the teacher would let you work with hot sugar in the first place, if they’re mainly a home ec teacher they should know that and not take any risks. thats why we dont have workshop anymore because middle schoolers/high schoolers should not be working with dangerous equipment

@@Emily-me it very much is so, its harder to treat immediately than a regular fire or grease burn. Like what sadly happened to you is the case with a lot of sugar burns when they make contact with skin is that the sugar hardens to the point it’s too hard to get off but it’s still too hot to touch. There’s also the problem with sugar taking a long time to cool compared to oil and water so even if you think it should be cooled down enough it might not be. Hot sugar is no joke. I’m not against cooking classes in middle or high school but there should have been more precautions or simply not used hot sugar at all is what I’m saying.

heard a story once where a girl had a wedding a week away, except she accidentally got some molten sugar on her hand and tried to get it off with her mouth, instead accidentally swallowing it. it burnt a hole through her trachea and her wedding had to be delayed for months. don't fuck with molten sugar, y'all.

as others have mentioned it's the stickiness that makes it worse. if water Burns you it tends to roll right off and the skin starts cooling nearly immediately. when something sticky and hot lands on your skin it burns for a much longer period of time until you can get it off somehow. part of the reason why this is much worse

I make homemade fudge every year (been doing it with my mom since I was around 6) and I still remember the first time the sugar mix burned me (it has to hit a rolling boil and then soft ball). Its so easy to get 3-4th degree burns from sugar. I salute you and all your lost skin for the sake of other's happiness. Lol
Exactly, it's particularly bad compared to other hot stuff not only because it is just THAT hot but they're also sticky so you cant even jerk your body away like if you accidentally touched a flame or hot pan.

I think the best way to show how hot it is is to have the audio play when you are mixing in the colouring, was watching some other candy maker and when they mix the dye, it’s bubbling, sizzling, steaming and it sounds dangerous.
Yeah, melted sugar is NOT something to mess with. Once when i was making flan with my mami (i was about 6-7 years old) she left the bowl on the counter and little me grabbed it, thought that maybe i could sneak a tiny nibble and submerged my whole hand in it. I burnt off LAYERS of skin off that day it was a real hustle getting it out with my screams of pain and damn.. It hurt like HELL. Never did i do that again. Its been 9 years and my hand is still pinkish brown with little bits of even deeper skin showing.

IIRC high temperature sugar/molten candy is sometimes referred to as "sugar bombs", and is used by inmates to attack one another and the description on how they work is sometimes compared to napalm as it sticks to the skin while it burns it

I'm actually proud it was invented by a poor, Swedish widower and single mother.
You might think her huge success came from alot of happyness but her story is actually very sad.
Her entire family died in a sickness at age 10, she married a man who she became pregnant with. She gave birth to 2 twins, but only 1 survived. A week later her husband dies. She moves to Gränna with hardly any money.
She asked for permission to start a bakery, was aproved and a while later Polkagris as its called, was made and sold and she became very rich and famous for this candy.
So even tho it had a good ending, it still was a hard road to get there. Pretty amazing actually🥰
I'm an occupational therapist and all I can imagine is the potential for long term sensory changes to their hands from repeated exposure to that heat
Not to mention the tendinitis, carpol tunnel syndrome and tennis elbow that resulted from pulling, stretching, stirring done repeatedly day after day.
To you kids at home, DO NOT PLAY WITH MELTED SUGAR. While in culinary school one of my baking teachers had this nasty story. She had a lovely girl in her class who was about a week off from getting married, and it was sugar week...Girly was making some candy and got some molten sugar on her hand and panics a little. For some reason homegirl used her MOUTH to clean it off her hand and ended up inhaling the molten sugar. The sugar then burned a hole through her trachea and they had to call off that wedding for several years. Sugar gets to a point thats HOTTER than boiling water when melted. PLEASE do not play with molten sugar unless you are an adult and know wtf you're doing.

People seem to forget just how hot cooking food is. Like the entire point of cooking is to heat up organic materials enough that they start to break down a little, for basically any sugar-based candy you are cooking sugar until it gets hot enough that it chemically changes its properties.
So yah anything cooked can hurt you. Cookies to chicken brest can burn you if you are not careful.

If it gets on your skin, it vaporizes the water in your flesh so you get 10 times the burning power. Plus it "holds" the heat so it takes a relatively LONG time to cool down, even under running water. It really IS like napalm. BTW I believe that's essentially what napalm IS: gasoline with SUGAR in it!

Way back in the mid seventies. I worked @ Allen's sweet's in Alexandria, Sydney. The one thing I dreaded was helping the confectioner roll out the hard candy.
My aunt is a candy maker and her hands is beautiful, its like work of art. She got scars, and hot spot all over her hands, I don't think she even got fingerprint at this point. Its so beautiful

Well the constant burning will remove prints but they will grow back and keep doing so and if she ever retires they will grow back. Prints will always come back unless you constantly get them damaged. Very cool though that she does this sorry to nerd out a bit.

@@alternateaccounts5134 it really depends on the kind of injury that happened one time I accidentally burned off most of mine but it grew back and you can’t even tell it happened but if it were a cut it might scar and split the print for a while but if I remember right the only way to really permanently remove them is by taking off the tips entirely.

My kitchen manager had scars on his forearms from working in a candy shop, I was told that fresh caramel is hell
One thing working at arbys taught me was that if your holding something extremely hot the second you feel like its too hot take off your gloves immediately as they will continue the burn if you dont. Learned that from taking the roast beef out of the oven. Everyone always got burned. The managers were just used to it so they had no issues

Diabetes: please allow me to introduce myself
Diabetes is something that takes a long time to develop. Especially as there are two types.
One that is genetic, and comes around from ages 5-15 (sometimes younger children can develop it) While the last one happens due to being overweight, with it being a slight chance in developing.
You'd have to eat candy every day without being physically active to even develop this condition.
