Ingredients
Digestive biscuits 300 g
Butter 150 g
Cream cheese 600 g
Powdered sugar 100 g
Eggs 3 pcs
Cream 30-35% 200 ml
Instead of thick cream, you can use 20% or even 10% cream, but this will slightly reduce the creamy taste.
The amount of ingredients is calculated for baking in a pan with a diameter of 22-24 cm. For a 26-28 cm pan, increase the amount of ingredients by 1.5-2 times, unless of course, you wouldn't mind the cheesecake coming out a bit lower.
These are the ratios for your convenience:
Digestive biscuits 500 g
Butter 166 g
Cream cheese 1 kg
Powdered sugar 150-200 g
Eggs 5 pcs
Cream 30-35% 333 ml
You should use a detachable form. If you plan to prepare a version of cheesecake without a side base and only with a biscuit base, then use 150 g biscuits and 50 g butter. The finished weight of the cheesecake is approximately 1.5 kg.
