    Too bad it ends mid sentence. I met her with my visiting mom and aunt at Gage & Tollner, in Brooklyn, in 1988. She came out from the kitchen to ask how the food was. Utterly divine. She-crab soup to die for and fantastic shad and shad roe. Amazing restaurant with Edna at the helm. Never forget it as long as I live. Never forget her as long as I live.

      Female fish produced shad an shad roe. Whickk Nana cooked which I thoroughly enjoyed!!

    The legendary Edna Lewis was hailed as the Southern version of Julia Child. Sorry Fab New York (below) , but Julia Child wasn't French nor was she a chef as she never worked in a restaurant. She was an American woman who demystified French cooking for American home cooks and she was beyond good. Edna Lewis was the first chef who really went into detail about American Southern Cuisine. Her fried chicken, which calls for lard, butter and country ham is what I measure all other fried chicken by.

    My parents used to eat at Cafe Nicholson all the time. They loved Edna's food and the cafe. They still mention it every so often.❤

    I love the history with these interviews. I met Chef Patrick Clark in the 90s and he was and still is one of my culinary heroes. And when I was about 17 I had the honor of being a dishwasher for Chef Joe Randall so now I am a chef and look forward to teaching others our history and culture in the world of culinary arts.

    I was able to pick up a cook/ book by Edna Lewis In Pursuit of Flavor, around 1989 or 90 still have and use it today.

      Ron Copeland you are so lucky I'm searching for this it costs a fortune now on Amazon I'm in the UK too which doesn't help.

    Edna Lewis was Americas GREATEST chef. Although Julia Child was good, she basically cooked French. Edna was ALL AMERICAN!
