    As a professional Chef, and avid outdoorsman, I cook a lot of wild game. Like, A LOT. Dove have virtually zero fat content, so that is where you are getting the "liver" taste. Flavor is in the fat. That's why duck and goose is so delicious, it has a high fat content in the meat. In order to counter the gamey taste of the dove you need to incorporate some kind of fat with it. Most people use bacon. A very fat-rich meat. When sauteing with mushrooms like you did in this video, try to use chopped bacon, or bacon grease next time instead of the balsamic glaze. Balsamic vinaigrette is a super strong flavor, and will just ruin the taste of wild game. Next time use, Chopped bacon, chopped onion, a pinch of sage and thyme, salt and pepper, a tiny squirt of lemon or lime juice, and your mushrooms. Try it, you won't be disappointed!

      Awesome, thank you for explaining this. We have cooked them with bacon and it was great. I just didn't know the reasoning behind it. I'll put that in my next dove video

      Usually the doves have fat in them , not the first few weeks of the season . late in the season they have a lot fat in them specially in the back , i usually put them in milk over night and then i put the on the grill the second day without no bacon or any other grease

    Recently found your channel. Love what you do. I love the taste of dove cooked in various ways. My favorite is to filet the dove as you did then marinade them in some orange juice and/or some garlic and herb marinade. I then slice some jalapeno in thin slices and place the jalapeno slice and a dab of cream cheese between the two halves of breast meat, wrap in bacon and bake until bacon is done. Can also grill them this way.

    Great video guys keep'em coming... my family and I usually debone the breast into halves, salt and pepper, halve jalapeños (clean seeds and veins) stack a jalapeño half on a dove half then wrap it in bacon throw them in the on about medium. Then bast with a garlic teriyaki and soy sauce mixture... comes out bomb every time.

    You almost made me mad. Due to health I couldn't do the dove opener this year. I was depressed all day.
    Suggestion, use a spoon and scrape the gills out of portabella mushrooms before cooking. In the old days we would take our limits to a nice restaurant and they would cook them up for our lunch. They sauted them in butter and wine. It was good, but I like another way better .now.
    I have a good recipe for dove. Let me know when you get more if you'd like to have it.

    Everyone does bacon wrap dove and they are great.I like to also get them and marinate them in milk soy sauce pepper a dash of tapatio a few dashes of tajin.soak over night in the fridge or two nights it doesn't matter you then can grill them or cook them in a pan I love to get them and put them in a dutch oven with a Little olive oil onionsbell peppers and mushrooms either in my oven or out on the fire excellent with a side of some good Spanish rice.hope you try it.good hunting and great video's.

    Lightly fry it in some onions. In bacon grease. Then make you a gravy an put the doves in it. Simmer it for a few minutes. That's how I do mine if I got several of them.

    Here is how I like to cook my dove/quail I make jalapeno poppers, one dove/quail I get 2 poppers and no they are not really that hot after I grill them. Here is what you will need 1 jalapeno per dove/quail , Philadelphia cream cheese, and I use Farmer John extra thick bacon strips and some tooth picks. Make sure to soak your tooth picks in some water for a little while. First I cut the stems off of jalapenos then in half long ways and clean out all of the seeds and rinse. Then you fill one half jalapeno with cream cheese put one half of a dove/quail breast on it and wrap it with one strip of bacon and hold it together with a couple of tooth picks. That is it, throw them on the grill and slow cook until the bacon is nice and crispy. This recipe is even better if you cook your quail this way. Enjoy. Oh ya, after I have breasted all of the dove/quail and boned the two halves and rinsed them. I pat them dry a little and season them very lightly with Pappy's and some garlic salt. Try this and let me know what you think.

      They kill deer and everything else in their path to include.... people's cats and dogs. They are unprotected for this reason. Plus you can sell their fur for about 100 dollars

    G'day Adrian Jnr, with you soaking the meat in salt water over night is that like sterilizing it? I have never had dove before so i 'am just curious.

      The salt draws the blood out of the meat. We hang our deer which helps all the blood drain. Doves just get put in salt water. The blood is what holds a lot of the game taste

      Anywhere outside of city limits haha.... we go to random spots over by Mt. Charleston, lake mead has a hunting area, north towards Alamo, or South towards Searchlight. We have found small game everywhere... we just put in a lot of time looking

      20 gauge yildiz Semi auto , i have it and i love it . it's cheap , and life time WT from academy, also you can buy the 12 gauge , but i thing 12 g is little to big . I shoot doves with either 410 or 20 g
