Potato mochi ingredients:
- 2 yellow potatoes (350g skin on, 310g peeled)
- 1/4 cup potato starch (or cornstarch)
- Vegetable oil (for frying)
- Nori seaweed
Sauce ingredients:
- 3 tbs sugar
- 3 tbs light soy sauce
- 2 tbsp mirin (optional)
- 1/4 cup water
- 1 tsp potato (or cornstarch)

i did make mine using russets one time, just out of curiosity, mainly because

it went just fine except being quite difficult to form the pucks, but the funniest part is that they taste like pringles.

I made a batch with white potatoes and it turned out really well! But I have to say even though they are delicious you can only eat about 2 at a time since the sauce is very salty 😅
