Berry Clafoutis

  • This is a French dessert that is often made with cherries. But today I will use what's in season, blueberries with a few raspberries and a peach that is just ripe enough. We will call it mixed berry clafoutis. You can use a fruit that is in season or one of your favorites and it will be elegant and delicious!
    I made this for my last Art Encounter with pottery gathering and the girls were pleasantly surprised. This is a simple dessert that takes very little time to prepare.
    RECIPE
    4 eggs
    1 cup heavy cream
    1/2 cup milk
    1 cup all-purpose flour or gf flour
    3/4 cup granulated sugar
    1 Tablespoon pure vanilla
    1/4 teaspoon salt
    2 cups blueberries (fresh)
    1/2 peach
    1/4 cup raspberries
    oil or butter to grease pan
    powdered sugar to top
    Rinse all berries and dry. Cut up if necessary.
    Place all ingredients in blender except berries and half of the sugar.
    Place blender on high for 1 minute until it is all combined well.
    Turn burner on medium high and place a thin layer of batter in fry pan. Cook for a few minutes until a film is set. Place berries on top of batter, then the spread the rest of the sugar and the berries to finish. It is ready for the oven.
    Bake in preheated oven at 350 degrees F for 50 minutes.
    Let cool slightly before slicing to serve with powdered sugar!
